Beef noodles: a soup noodle with big chunks of half fatty and half lean beef in a beef broth. One of the quintessential parts of Taiwanese food culture.

Hot pot: it’s the idea of taking a pot of boiling water or soup and cooking meat and vegetables in it. Pretty much anything goes here: any kind of meat, vegetable, mushroom, etc.

Stir fried morning glory: not a vegetable that’s common in Canada/USA, but can be found in Asian supermarkets. It looks and feels like green onion with a slightly thicker skin, but tastes like spinach and has a nice crunch.

Szechuan style spicy wontons: the wonton is very similar to other kinds of wontons (ground pork and shrimp in a dough wrapper). In this case, it’s got a spicy, yet savoury sauce that slightly numbs the tongue.

Xiaolongbao (soup dumplings): similar to a wonton as far as its filling goes (it can be pure pork, pure shrimp, or mixed) with a key difference in that it contains hot soup. They originated from Shanghai, but it’s made its way into mainstream Taiwanese cuisine.

Shaoxing drunken chicken: it’s essentially chicken that has been steamed and marinated in a brine of shaoxing wine and chicken broth.

Bubble tea: yet another famous part of Taiwanese cuisine. The original variant was a milk tea with tapioca pearls, but now it’s evolved and comes in many flavours, from any kind of tea to a fruit slushie, with either tapioca pearls or fruit jellies (or even ice cream!)

Grilled giant prawns: Prawns a pretty regular thing in a lot of places, but at the local Shilin nightmarket, they are fished out and cooked only when ordered – so they are guaranteed fresh. These prawns are also HUGE. The three in the photo were around half a pound in total.

Oyster pancake: a popular food at the night markets, it’s essentially an omelette (with added starch for thickness) with oysters inside, with a savoury sauce poured on top.

Popcorn chicken: can be summarized as Taiwan’s take on fried chicken. It’s got Chinese style seasonings such as five-spice, and Thai basil. It can be found at many street vendors and night markets.

Kaoliang wine: this wine is made from fermented sorghum. It’s got a nice strong kick, and not so much a wide flavour profile. This alcohol is a big export of the Taiwanese island of Kinmen

Three cup chicken: named after the three key ingredients for the sauce: rice wine, soy sauce, and sesame oil. The chicken is cooked in the skillet.

Mango shaved ice: mango chunks with mango ice cream on top of mango flavoured shaved ice. It tastes exactly like what one would imagine. The little purple and orange balls are made of taro and potato/sweet potato flour and are nice and chewy.

Of all the food I miss, I’d say it’s the beef noodles. That’s the one thing I have the strongest craving for and unfortunately for me, there aren’t any that I like where I live. To see other parts of my trip to Taipei, click here.

We got to try some Indonesian Roti. Each dish was like a dollar!! We watched the staff at the restaurant tossing and spinning the dough and everything. They have plain roti, roti with sausage, cheese, onions, or even dessert roti!

Getting around is pretty easy with the many taxis around or even a motorbike rental. I’ve read that there have been altercations between taxi drivers and Grab drivers, but I didn’t experience that while I was there, except for some areas clearly marked as not Grab friendly. There aren’t a lot of gas stations around, but a lot of stores fill up petrol in vodka bottles and sell them.

This section of the beach was part of a restaurant/bar/resort called Ku De Ta, and people could just sit back and enjoy a drink or two (cigars are on the menu too!) while enjoying the beach. Locals own the chairs on the beach and charge people to sit on them.

We couldn’t chill on this beach, but we did have a pool in our villa! Mike made an amazing video tour of the villa in his video below!

I spent my time in the pool learning how to swim (at this point, I didn’t even know how to float). I started off being super uncomfortable even leaning back to float, and was really frustrated at not being able to do basic actions on the water. I looked up YouTube videos on how to float and tread water and eventually figured it out! We basically stayed in the pool until we got hungry for dinner – this time to try local seafood. Mike, if you’re reading this, you missed out by not recording this part.

After the meal, we went back in the pool. I practiced some more, and when I got tired, I floated on my back and gazed at the stars.

I was disappointed to leave this amazing villa, but alas, all good things must come to an end. The next day, we took the plane and flew back home, where we resumed our regular lives.

The first stop is a food market not far from where we stayed. The curry dish isn’t as spicy as it looks and is very flavourful. The beef noodles is pretty similar to pho, but with their Thai spin on it with the herbs that they use. I’d say it had a bit more umami than the typical pho. The Pad Thai I thought wasn’t as flavourful as I liked, and was actually kind of plain. The other two dishes are highly recommended though!

As far as fruit smoothies go, the fruit seemed to be so much more flavourful. I know that with bananas they are harvested before they’re riped so they can last for a few weeks as they are transported, so it’s possible the same thing is happening with these fruits. But since these fruits are local, they get to fully ripen on the tree.

I also saw them add a little bit of salt to enhance the existing sweetness and acidity of the smoothies. It made it perfectly sweet, without being overpowering.

Next is probably the most famous dish in northern Thailand: Khao Soi. It’s a noodle dish with soft noodles in the soup and deep fried noodles on top. The soup itself can vary in spiciness, but is made of a curry-like sauce with meat, chilis, lime, and coconut milk.

The main attraction about this dish for me is the spiciness of the soup. It isn’t just a big spicy attack on the senses, but rather it’s nuanced because it’s balanced by the coconut milk.

Last but not least, we had some tom yum, yellow curry, and morning glory. This place is an actual restaurant with western style ambience, so naturally there was a price premium to that.

It’s kind of difficult to comment on how the yellow curry and tom yum tasted because it was way too spicy for our senses. I definitely tasted the spiciness and sourness of the soup, but the spiciness overpowered me quickly. The best by far as the morning glory. I just really like leafy greens with crunchy stems. The chilis added gave it a slight zing.

Each elephant has a story of what it spent its life doing while in captivity such as elephant riding, or illegal logging, etc. Some even have injuries like broken hips from their past abuse. But now they get to live out the rest of their lives in the sanctuary.

The santuary is not just for elephants, but for cats too! There are also dogs lazing about as well.

We started the tour off with feeding the younger elephants. Even though they’re only a few years old, they’re still huge. It was cool to feel the elephant grab an entire bunch of bananas with its trunk and put it in its mouth. For a brief moment, I felt the scaly skin of its trunk, covered in dirt, brush against my hand. The reason elephants are covered in dirt is because the dirt protects their skin from the sun.

We got to pet a few of these elephants. I learned that elephants actually have hair! Some elephants had less hair due to their abuse. The guide explained that when they are used as riding elephants, they tend to lose a lot of hair from people climbing on and off of them. Their skin feels scaly as one might expect, but the sparse hairs are quite stiff – kind of like the bristles on a toothbrush.

It was so hot that day, they went playing in the river. It was probably the hottest day of the trip so far. So hot that I really didn’t want to move out in the sun.

This guy came running right for us. The guide said some of these elephants were the same ones we fed, and so it was possible they recognized our scents thinking we had more food. There are no fences in between humans and elephants, and there are attendants everywhere that the elephants listen to.

The guide told us that the more sunken in the elephant’s head is at its temple, the older it is. As it ages, the air inside the elephants skull slowly leaves, which causes the sunkeness. I definitely noticed this between the smaller/younger elephants and the larger/old ones.

Stockholm used to be just an island, and since Stockholm has expanded outside of the island, the island portion has become the old town, known as Gamla Stan.

Some buildings in the old town have fake windows, because glass was expensive back then (3rd floor middle window).

There’s a random piece of Viking runestone on the corner of a building. And it’s protected by a cannon barrel on the street corner…

The Scandanavian countries really like their royal guards…

H&M sells home products in Sweden! I haven’t seen that anywhere else.

At our hostel, we met some awesome people and went on a bike tour with some of them, guided by a local Swedish fellow. He took us to the top of a hill overlooking the river and Gamla Stan.

This was part of the common area at our hostel. They did a good job with that antique look and they even made us take our shoes off when inside.

At the Stockholm Royal Armoury, they showed off a bunch of carriages. Since we are nerdy engineers, we spent a while analyzing how its suspensions worked.

I heard Swedish meatballs are famous.

The Vasa Museum was probably the most incredible attraction. The Vasa was a Swedish warship that sank on its maiden voyage. It was supposed to be a symbol of Swedish military might at the time, but it sank because it was too top-heavy due to the many cannons it had on board and not enough width to counter the tipping of the ship from its weight. It was later discovered that the ship was very well preserved and now it is on display.

What is more Swedish than going to Ikea and eating meatballs? There is a free shuttle that goes to Ikea too!

The best part of the trip was meeting a bunch of cool people in our hostel room! We had a room of 8 and every single person was fun to hang out with as opposed to normally I don’t get to talk to everybody. This time, the 8 of us got to chill in the room having beers and stuff. One of them was from Kentucky who was currently living in Alabama – of course all the America jokes were directed at her. Another was from Australia who had just finished his contract with the ANZAC navy after serving in Afghanistan and Iraq – he was quite open in talking about his experiences and I learned a ton from him! I also learned a nice trick to cooking pasta from one of the Italians: always salt the water before cooking the pasta! He even said that people thought he was crazy when they saw him salting the water. I also got some good hookups in Shanghai from our Chinese roommate – awesome when I decide to go there! It was amazing how well we all clicked and definitely an unforgettable experience in my travels.

CAVEAT: NETFILE did not work for me.  I had to submit my taxes through an installation done on Windows

1. Install PlayOnLinux and then run it (e.g. starting it through the Terminal)

sudo apt-get install playonlinux

2. Click “Tools” > “Manage wine versions”
3. Choose 1.7.27 under “Available Wine versions” and then click the right arrow “>”
4. Go through the steps in the installer and let it finish
5. Back in the PlayOnLinux main screen, click “Install” in the menu, and then click “Install a non-listed program” on the bottom left
6. Choose “Use another version of Wine”, when asked, and then choose 1.7.27
7. Choose “Install a program in a new virtual drive”, when asked
8. Choose “32 bits windows installation”, when asked
9. Find the location of setup.exe for the TurboTax installer (I copied the files off of the disc to a place on my hard drive)
10. Ignore the message “Error in FS_Check” if it appears
11. Let the install complete, but do not launch TurboTax right away
12. Choose “tt2014.exe”, if asked to create a shortcut
13. Back in the PlayOnLinux main screen, select entry for TurboTax and click “Configure” in the menu
14. Make sure the “Wine version” is set to 1.7.27
15. Under “Install components”, install the following in this order (some of these may not be required, but I don’t know which since this is the configuration that worked for me):
    • vcrun2012
    • Microsoft Core Fonts
    • msvc100
    • RegisterFonts
    • vcrun2010

This is what worked for me, so hopefully this will work for others.

Looking back, I should have used a book like the “UnrealScript Game Programming Cookbook” by Dave Voyles.  This book is directed towards audiences who have never touched Unreal programming before.  However, it does require readers to have some familiarity with general object oriented programming knowledge.

This book in particular follows a recipe-based approach for teaching the basics of Unreal programming and covers the core topics in programming for UDK.  The recipes are designed to be basic in order to give learners good exposure without too much of a knowledge dump.  Some may argue that having a recipe-based approach doesn’t teach people how to synthesize solutions for themselves.  I see recipes as a good stepping stone.

This book is not meant to teach you everything there is to know about UDK, but enough for people to get started with a good foundation to learn off of.  From the book, I would have liked to see more details about the nuances of the UnrealScript language, as well as a more big picture view of how all the different topics illustrated in the book fit together – perhaps a chapter dedicated to that.  The way it is organized right now is that the big picture is explained, but the explanations are scattered throughout the book.  I am someone who much prefers a more top-down approach on topics like this.

In any case, this book is still a great resource for learning Unreal programming and I would recommend it to people who would like to start their learning adventure in UDK.  Here is a sample chapter of the book for those who are curious in seeing for themselves what this book has to offer (here).  For more information about the book, click here.

Personally, I simply got tired of sleeping so little.  I always sacrificed sleep for more work time in the past.  But now, I’ve come to realize how powerful being rested really is.  It feels so empowering when I wake up in the morning, fully refreshed.  I don’t have to struggle to get out of bed or set 5 alarm clocks to get me out of bed in the morning.  The reason that the struggle exists is because the body wants more sleep.  This is a clear sign of not sleeping enough.  I’m definitely no sleep expert and I don’t claim to be, but I thought I’d share some techniques in how to think differently about sleep.  But first, I think I should share my experience with sleep deprivation, which I felt heavily motivated me into adopting this way of life.  All of this below is just my view on sleep health.

My Battle with Sleep Deprivation

In high school, I pretty much got 8 hours of sleep a night.  It wasn’t that hard since at that time I didn’t really think about optimizing my sleep.  I just remember being nagged to go to sleep by my parents every night.  I never had to stay up doing any homework or anything like that.  Even my first year of university was like that.  Rarely found myself staying up to do work unless there was a exam the next day or something.

Second year of university is when it all changed.  A thought clicked in my head that I could sleep less and get more work done.  It’s not like I felt sleepy at night anyways.  For a while it was alright, but then as I slept less and less, my sleep debt accumulated.  I found myself napping in class.  I even micro-slept while I drove and almost got into not one, but a couple car accidents.  I didn’t try to do anything about it at the time.  I liked the extra time.  There was a while where I slept about 4.5 hours a night because I stayed up playing computer games.  I looked like a zombie.  I yawned all the time and everyone knew I was sleepy.

In my third year, I lived alone on campus.  No one told me when to wake up to go to class.  With all the sleep debt I had, I struggled to get up every morning.  Eventually, I stopped going to morning classes altogether and my grades suffered.  I started questioning myself, “why is it so hard to sleep early?”  I was easily annoyed all the time.  I was so tired at one point, that I caught myself hallucinating.  It was weird because I saw this strange bug crawling up the curtain and when I waved the curtain around, it was gone.  I couldn’t find it anywhere on the floor.  I wanted to change my sleeping habits, but I couldn’t do it.  Logic told me to do it, but I couldn’t act on it.

My sleeping habits didn’t change until I went to Germany for my co-op work term.  I guess because I was adjusting to this new environment, I actually felt sleepy at night.  This urge made me sleep a lot earlier than what I was used to doing.  I felt rested for the first time in a long time.  It felt so good.  My constant zombie look faded away.  I could tell that my skin complexion was improving.

I guess because I’ve seen how dangerous sleep deprivation could be, it finally compelled me to change my ways.  Ever since I’ve made sleep a priority, I feel a lot healthier.  I lose out on wake-time for working, but I am able to think better when I am rested.  My thoughts are a lot clearer.  That makes me a more efficient worker.

Getting into the Frame of Mind

You’ve got to be truly convinced that you want to get more sleep.  I know a lot of people who say things “yeah I know I don’t get enough sleep”, but they don’t do anything about it.  Nothing at all.  Everyday they keep their usual sleep routine and they’re struggling all the time.  They’re the ones who are always late to morning appointments, and some even for afternoon appointments.  Why does it have to be that way?  It doesn’t.  But before even trying to maintain a proper sleep routine, people really have to change the way they think about sleep.

Sleep is NOT a waste of time. I’ve heard people say, “sleep is a waste of time” or “sleep is for the weak”.  It definitely is not.  Somehow I think there is a competition between who gets the least amount of sleep and still gets the most work done.  I’ve heard people people saying (sometimes bragging) stuff like how they got only 3 hours of sleep and then pulled an all-nighter to study for an exam.  Sure, they definitely were up for a while, but should we question the efficiency of that work?  Of course.  Anybody who has pulled an all-nighter has experiences how “out of it” they were by the end if not half way through.  Nobody wants to do an all-nighter.  That is an extreme case though.  A more common theme is to stay up for 18 hours or so.  That leaves 6 hours to sleep.  The average for most people lies somewhere around 7.5-8 hours.  According to the statistics, more than half of us need more than 6.  By not getting our required amount of sleep, this so-called “sleep debt” will accumulate over time.  Like I mentioned before, I once slept on average 4.5 to 5 hours a night for about 3 months straight.  People around me could tell I looked like a zombie.  I’ve definitely experienced sleep debt first hand.  In retrospect, doing this was so stupid, but that experience definitely helped me reshape what I thought about sleep.  It is a necessity.

Getting into the right frame of mind takes time.  I definitely did not just one day choose to make sleep a priority.  It happened over time.  For me it took a few years in order for me to drill it into my head.  After sleeping late and waking up early, I’d ask myself why I did that.  Why did I sleep so little the night before when the consequence was me feeling sleep deprived the day after?  As I’m in my early 20’s, sleeping late is easy.  It’s not difficult to just stay up late doing nothing in particular.  In fact, it seems to be natural tendency for most people in my age group to be night owls.

Going to bed early is not a chore.  Chores are something we’d rather not do, but we’re only doing it because we have to.  This attitude will not work.  Eventually, you’ll give up and revert to your old ways.  You have to change your attitude toward sleep.  You know how some people feel passionate about their work and will always feel motivated to do it?  That’s their motivation.  There is a similar motivation for sleeping early.  I want to go to sleep early today, so I feel rested and ready to go tomorrow.

Ask yourself why your sleep habits are the way they are right now.  Why do I have to wake up feeling terrible every morning?  Why do I have to set so many alarms just to get out of bed?  Why am I pressing the snooze button so much?  Shouldn’t I be getting up super early? Doesn’t this struggle to wake up give me less time to get ready?  If I don’t have enough time to get ready, won’t I look like a mess when I go to work/school?  Am I sleeping late all the time because I have so much work to do?  Could I be improving on my time management to make me more efficient? Is sleeping late worth it?  I’m sure there are way more questions to be asked, but asking yourself these questions will tell you how you really feel about it.  Everyone’s going to have different answers.  Some might want to change, but others might feel that what they’re doing is the best solution right now.

The Bottom Line

Sleep is absolutely essential for good health and its benefits are far reaching.  Ever since I’ve slept better, I’ve been able to accomplish more.  No longer am I the sleep deprived zombie.  My grades in school are better despite harder courses and more commitments. Better sleep health is something that anybody can do, but they have to want it.  You have to convince yourself that sleep deprivation is a terrible thing and it is something to avoid.  You’ve got to get into the frame of mind that sleep health is good and the will to change.  If you truly want to improve your sleep habits for the better, the improvements will happen.
