<p class="wp-block-paragraph">Arriving at Pamukkale in the morning, the first thing that caught our attention was the dazzling sweep of white, rising from the plain like a tiered amphitheatre. The travertine terraces, created over thousands of years by mineral-laden hot springs, shone in the sunlight. After having lunch and chilling by at the hotel pool with the rest of the tour group, we made our way up to the terraces at dusk.</p>



<h2 class="wp-block-heading">How Water Built a &#8220;Castle&#8221;</h2>



<p class="wp-block-paragraph">We learned from our guide that each terrace is a natural bowl of travertine, a limestone deposited when hot, calcium-carbonate spring water loses carbon dioxide and solidifies. Over millennia the process stacked basin upon basin, producing a 200-metre cliff that gleams as if it has never known a footprint.</p>

<p class="wp-block-paragraph">UNESCO recognised both the geology and the adjacent Greco-Roman spa of Hierapolis in 1988, ensuring stricter water-flow management so the terraces retain their snowy coat.</p>



<h2 class="wp-block-heading">Ruins with Stories in Stone</h2>



<p class="wp-block-paragraph">At the hilltop the ground levels into the ruins of Hierapolis, founded by the Attalid kings in the second century BCE.</p>

<p class="wp-block-paragraph">The theatre dominates the skyline. We hiked up to the top an watched the sunset.</p>

<p class="wp-block-paragraph">The city sits atop the Pamukkale fault zone, a geologically active area responsible for both the mineral-rich hot springs and the site’s seismic instability. Major earthquakes are recorded in 17 CE under Tiberius and again, even more devastatingly, in 60 CE under Nero. The city was rebuilt with Roman imperial funds, but the threat of further destruction always loomed. Additional earthquakes in the 14th and 17th centuries CE led to significant structural collapse and abandonment by the surviving population.</p>

<p class="wp-block-paragraph">Within the ruins, stray animals call it home. Among the stray cats and dogs, a turtle stands out, a pet-trade species now ranked among the world’s most invasive reptiles.</p>



<h2 class="wp-block-heading">The Myth of Cerberus</h2>



<p class="wp-block-paragraph">South-east of the stage lies the Ploutonion, once famed as “Pluto’s Gate”. Ancient writers described sacrificial bulls collapsing here while priests emerged unharmed. Modern gas probes explain the trick: a fissure still vents carbon dioxide strong enough to reach lethal concentrations near the ground.</p>

<p class="wp-block-paragraph">From the viewing deck we could see the statue of Pluto and Cerberus guarding the gate to hell.</p>



<h2 class="wp-block-heading">The Bare-Foot Gauntlet</h2>



<p class="wp-block-paragraph">The guide offered us two options to go back into town: 1) to take the bus back, or 2) walk down the terrace &#8211; reluctantly, I opted for the second option.</p>

<p class="wp-block-paragraph">Visitors must walk the slope barefoot, a rule that protects the fragile crust but punishes one’s soles like walking on Lego.</p>

<p class="wp-block-paragraph">We chose each step carefully, hunting for the smoothest stripes between ridges. The descent stretched only a few hundred metres, yet the stinging pressure made it feel closer to half an hour, each step a tactical decision rather than a stroll.</p>



<h2 class="wp-block-heading">A Welcome Shift in Flavour</h2>

<p class="wp-block-paragraph">Once we all made it down, our guide took us to a restaurant that happened to be run by Chinese immigrants in Turkey. We slid chopsticks through shrimp fried noodles, a flavour more reminescent of home, something welcome especially by now I was slowly getting tired of Turkish food.</p>

<p class="wp-block-paragraph">As we prepared to depart the next morning, we looked back to see hot air balloons launching into the morning sky.</p>

When people talk about Taiwan, food is often one of the first things that is mentioned.  Taiwan is famous for its abundance of local foods at the local night markets, and some of these foods described below can be found at these markets.</p>

<p class="wp-block-paragraph"><strong>Stir fried morning glory</strong>: not a vegetable that&#8217;s common in Canada/USA, but can be found in Asian supermarkets.  It looks and feels like green onion with a slightly thicker skin, but tastes like spinach and has a nice crunch.</p>



<p class="wp-block-paragraph"><strong>Szechuan style spicy wontons</strong>: the wonton is very similar to other kinds of wontons (ground pork and shrimp in a dough wrapper).  In this case, it&#8217;s got a spicy, yet savoury sauce that slightly numbs the tongue.</p>



<p class="wp-block-paragraph"><strong>Xiaolongbao (soup dumplings)</strong>: similar to a wonton as far as its filling goes (it can be pure pork, pure shrimp, or mixed) with a key difference in that it contains hot soup.  They originated from Shanghai, but it&#8217;s made its way into mainstream Taiwanese cuisine.</p>



<p class="wp-block-paragraph"><strong>Shaoxing drunken chicken</strong>: it&#8217;s essentially chicken that has been steamed and marinated in a brine of shaoxing wine and chicken broth.</p>

<p class="wp-block-paragraph"><strong>Bubble tea</strong>: yet another famous part of Taiwanese cuisine.  The original variant was a milk tea with tapioca pearls, but now it&#8217;s evolved and comes in many flavours, from any kind of tea to a fruit slushie, with either tapioca pearls or fruit jellies (or even ice cream!)</p>

<p class="wp-block-paragraph"><strong>Grilled giant prawns</strong>: Prawns a pretty regular thing in a lot of places, but at the local Shilin nightmarket, they are fished out and cooked only when ordered &#8211; so they are guaranteed fresh.  These prawns are also HUGE.  The three in the photo were around half a pound in total.</p>

<p class="wp-block-paragraph"><strong>Oyster pancake</strong>: a popular food at the night markets, it&#8217;s essentially an omelette (with added starch for thickness) with oysters inside, with a savoury sauce poured on top.</p>



<p class="wp-block-paragraph"><strong>Popcorn chicken</strong>: can be summarized as Taiwan&#8217;s take on fried chicken.  It&#8217;s got Chinese style seasonings such as five-spice, and Thai basil.  It can be found at many street vendors and night markets.</p>



<p class="wp-block-paragraph"><strong>Kaoliang wine</strong>: this wine is made from fermented sorghum.  It&#8217;s got a nice strong kick, and not so much a wide flavour profile.  This alcohol is a big export of the Taiwanese island of Kinmen</p>

<p class="wp-block-paragraph"><strong>Mango shaved ice</strong>: mango chunks with mango ice cream on top of mango flavoured shaved ice.  It tastes exactly like what one would imagine.  The little purple and orange balls are made of taro and potato/sweet potato flour and are nice and chewy.</p>



<p class="wp-block-paragraph">Of all the food I miss, I&#8217;d say it&#8217;s the beef noodles.  That&#8217;s the one thing I have the strongest craving for and unfortunately for me, there aren&#8217;t any that I like where I live. <p class="wp-block-paragraph">The first stop is a food market not far from where we stayed.   The curry dish isn&#8217;t as spicy as it looks and is very flavourful.  The  beef noodles is pretty similar to pho, but with their Thai spin on it  with the herbs that they use.  I&#8217;d say it had a bit more umami than the  typical pho.  The Pad Thai I thought wasn&#8217;t as flavourful as I liked,  and was actually kind of plain.  The other two dishes are highly  recommended though! </p>

<p class="wp-block-paragraph">As far as fruit smoothies go, the fruit seemed to be so much more flavourful.  I know that with bananas they are harvested before they&#8217;re riped so they can last for a few weeks as they are transported, so it&#8217;s possible the same thing is happening with these fruits.  But since these fruits are local, they get to fully ripen on the tree.</p>



<p class="wp-block-paragraph">I also saw them add a little bit of salt to enhance the existing sweetness and acidity of the smoothies.  It made it perfectly sweet, without being overpowering.</p>

<p class="wp-block-paragraph">Next is probably the most famous dish in northern Thailand: Khao Soi.  It&#8217;s a noodle dish with soft noodles in the soup and deep fried noodles on top.  The soup itself can vary in spiciness, but is made of a curry-like sauce with meat, chilis, lime, and coconut milk.</p>



<p class="wp-block-paragraph">The main attraction about this dish for me is the spiciness of the soup.  It isn&#8217;t just a big spicy attack on the senses, but rather it&#8217;s nuanced because it&#8217;s balanced by the coconut milk.</p>

<p class="wp-block-paragraph">Last but not least, we had some tom yum, yellow curry, and morning glory.  This place is an actual restaurant with western style ambience, so naturally there was a price premium to that.</p>



<p class="wp-block-paragraph">It&#8217;s kind of difficult to comment on how the yellow curry and tom yum tasted because it was way too spicy for our senses.  I definitely tasted the spiciness and sourness of the soup, but the spiciness overpowered me quickly.  The best by far as the morning glory.  I just really like leafy greens with crunchy stems.  The chilis added gave it a slight zing.</p>

<p class="wp-block-paragraph">The food I miss most is definitely the fruit smoothies.  When I came back home, I had constant cravings for those smoothies for weeks. I heard many people rave about it, and had to go there for myself. After a mishap where the airline assigned the same seat to different people, my mom and I each got 3 seats at the back of the plane to ourselves and for the first time, I got to lie down horizontally with my legs stretched out to sleep!</p>
<p>This is probably the most iconic area in Singapore &#8211; Marina Bay. Starting with the Merlion, we toured around the bay. I didn&#8217;t actually understand what a Merlion was until I saw the actual statue.</p>

<p>The placement of all the buildings and the water was so perfect for photos!! This area is a must-go.</p>

<p>In Chinatown, there is a famous Michelin 1-star place located in Chinatown called Hong Kong Soya Sauce Chicken Rice &amp; Noodle. The lineup almost went out the door and it was next to impossible to find a seat.</p>

<p>There&#8217;s also Song Fa Bak Kut Teh. They serve a ribs cooked in a flavoured soup. The ribs are super tender and fall easily off the bone, and the soup is a complex soup with lots of strong spices (kind of savoury and peppery). The shop even sells their own flavouring powder so people can make the soup at home!</p>

<p>Chinatown is pretty much a place where tourists go and most of the street vendors are catering purely to tourists. But the food here, on the other hand, is terrific.</p>

<p>Next destination was Little India. It was amazing at how all of a sudden, the streets were no longer filled with Chinese Singaporeans, but rather Indian Singaporeans. Many shops sold fabric for saris, and jewelry.</p>

<p>Sentosa is another great place to visit. It&#8217;s the home of many resorts, Universal Studios Singapore, and the aquarium. It&#8217;s also the most southern point of continental Asia! I always thought the Vancouver aquarium was pretty amazing, but the one in Singapore is SO much better.</p>

<p>This was the most impressive aquarium display I had ever seen. The picture doesn&#8217;t capture how absolutely massive this room was. The window itself has a thickness of 70cm!!</p>

<p>Singapore also has a world class zoo &#8211; except this one is open at night, just to show off nocturnal animals.</p>

<p>Gordon Ramsay recommends 328 Katong, for Singapore&#8217;s famous Laksa. The soup is slightly spicy and contains chili, coconut milk, and evaporated milk. THe fillings contain noodles, shrimp and mushrooms among other things. The other two dishes are Nasi Lemak, which is a rice dish with dried anchovies and a spicy sauce, while the other is Otah, which is a fish cake with spices inside (these two items were probably the only dishes I didn&#8217;t like).</p>

<p>Pretty much all the restaurants and places I went came from recommendations from friends who either grew up in Singapore or lived there. Thanks to them, I got a bit of a local&#8217;s perspective on the most awesome places to go!</p>

<h1>Breakfast</h1>
<p>Hong Kong breakfast is what I crave, and a lot of it is simple enough to make at home without too much effort with the exception of Dim Sum.</p>

<p>These are all Dim Sum dishes, typically cooked by steaming.  On the bottom left, there is Shaomai, which is a dumpling containing pork and shrimp.  This particular variety is what is most well known in English speaking countries, and actually has its roots in Inner Mongolia.  Clockwise (ignoring the half eaten dish) is steamed ribs in black bean sauce.  Top right is either a Chiu Chow dumpling or a chive dumpling, but they are both similar in that they both contain vegetables, fungus, and sometimes pork.  Bottom right is a shrimp dumpling.  Bottom middle is a steamed meatball.  It contains beef and water chestnut and other seasonings and is served with Worcestershire sauce.</p>

<p>Another classic in Dim Sum &#8211; this are steamed rice rolls.  The white part is made of a wide strip of rice noodle usually with filling from shrimp, pork, or beef, and the sauce on top is soy sauce.</p>

<p>The sight of chicken feet as something edible frequently scares foreigners.  Rather than just calling it chicken feet, it&#8217;s commonly known as Phoenix Claw.  It&#8217;s prepared via a complicated process of frying, braising, simmering, and steaming &#8211; one of the most difficult Dim Sum dishes to make.</p>

<p>The top left is the usual eggs, ham, and bread (in this case garlic bread).&nbsp; The middle is Satay Beef Noodles.&nbsp; Satay refers to cooking meat with a spicy, sweet, peanut sauce that originated from Indonesia.&nbsp; The noodles in the picture are just rice noodles, but it doesn&#8217;t have to be.&nbsp; The top right drink is Hong Kong style milk tea.&nbsp; It&#8217;s similar to the British style of black tea with milk and sugar except that the Hong Kong variant uses condensed or evaporated milk &#8211; I would drink this over coffee any day of the week.</p>

<p>This is a pineapple bun with a slab of butter inside it (the bun is served warm so the butter slowly melts inside of it). The bun doesn&#8217;t actually contain pineapple, but it the crunchy top can sometimes resemble a pineapple. The bun itself tastes like a regular bun, but the top adds a slight sweet flavour, and of course there&#8217;s the flavour of melted butter.</p>

<p>The bowl of noodles is just regular instant ramen noodles (typically Nissin 出前一丁 noodles) in the restaurant&#8217;s own soup with a deboned chicken drumstick. This dish is often served with fried eggs and <a href="https://en.wikipedia.org/wiki/Spam_(food)" target="_blank" rel="noopener noreferrer">Spam</a> instead of chicken.&nbsp; The drink to the right is <a href="https://en.wikipedia.org/wiki/Horlicks" target="_blank" rel="noopener noreferrer">Horlicks</a>, a malted milk drink. It&#8217;s often associated as a kid&#8217;s drink, but still enjoyed by adults.</p>

<p>The dish on the left is macaroni in chicken broth with ham slices. I ate this a lot growing up and for some strange reason a lot of non-Asian people I&#8217;ve explained this dish to think it&#8217;s gross. The dish on the right is the typical egg, sausage, and toast, and the drink up top is milk tea.</p>

<p>Congee is a popular breakfast dish and it&#8217;s common to add all sorts of different ingredients like fish, chicken, pork, Chinese doughnut, etc.  The one above is congee with Chinese doughnut, fish balls, beef balls, and peanuts.  Another popular one has lean pork and century egg.</p>

<p>Hotpot is probably my favourite.  Take a broth (beef, chicken, fish, spicy, or whatever) and just cook whatever you want inside it.  Traditionally, the entire table all share one giant pot and everyone cooks their food inside it, but in recent times, having one small hotpot per person is becoming more popular.</p>

<p>These two dishes are classics in Hong Kong &#8220;Cha Chaan Teng&#8221; (茶餐廳) establishments. The one on the left is Baked Portuguese Chicken Rice. It&#8217;s not actually Portuguese and has its origins in Macau (just a ferry ride away from Hong Kong!), which was a Portuguese colony at the time. It&#8217;s essentially chicken and potatoes on top of fried rice in a creamy sauce with spices (e.g. turmeric, cumin, etc.), coconut milk, and chicken broth. The one on the right is Baked Pork Chop Rice. It&#8217;s baked in the same way as the previous one, but it&#8217;s fried pork chop and tomatoes on rice with a slightly sweet, cheesy, tomato sauce &#8211; one of my favourites. The drink is a lemon tea, which in this case it&#8217;s black tea with lemon slices and sugar.</p>

<p>The dish on the left is a roasted goose.  It has the consistency of chicken, but has all dark meat and a more intense flavour than chicken.  The dish on the right is poached chicken and roast pork belly on rice.  Poached chicken might sound strange to some people, but it is actually quite flavourful if the brine is made well and the chicken is of high quality. The poached chicken is typically eaten with a sauce made of minced green onion, ginger, and oil.  Roast pork belly is special mainly because of its thick crusty skin.</p>

<p>This is Claypot Rice.  It&#8217;s essentially rice, meat, and soy sauce among other things all steamed together, but it doesn&#8217;t count unless there are crusty bits of rice on the side of the bowl formed from the steaming.</p>

<p>This is Wonton Noodles.  The Wonton is the dumpling with shrimp and vegetables (one could argue that the above isn&#8217;t an actual wonton due to the shape of the dumpling, but let&#8217;s not get into technicalities), the noodles themselves are egg noodles cooked al dente, and the soup is usually derived from fish.  The soup itself has flavour, but not so much so that it doesn&#8217;t overpower everything else.</p>

<p>These are also typical noodle dishes.  The one of the left is beef brisket in a beef soup and the other is fish balls and fish tofu in a fish soup.</p>

<h1>Snacks</h1>
<p>These are the street food style snacks. Huge ones that I&#8217;m missing here are <a href="https://en.wikipedia.org/wiki/Egg_waffle" target="_blank" rel="noopener noreferrer">bubble waffles</a> and <a href="https://en.wikipedia.org/wiki/Egg_tart" rel="noopener noreferrer" target="_blank">egg tarts</a> unfortunately!</p>

<p>The bun on the right is the Pork Chop Bun, originally from Macau.  It&#8217;s essentially a pork chop sandwiched in a Brazilian style bun (so-called piggy bun).</p>

<p>This looks like a dessert, but it&#8217;s actually served at some Cha Chaan Tengs.  The white one is steamed milk pudding and the yellow one is steamed egg custard.  It&#8217;s essentially milk or eggs with sweet flavouring (e.g. sugar, vanilla extract, etc.) that is steamed.  It&#8217;s almost like a Hong Kong style crème brûlée.</p>

<p>These are fish balls. A lot of times they are made from processed fish, but can be made from fresh fish as well. Generally they are served a curry sauce, but they are also available in other types of sauces for people who can&#8217;t handle the spice.</p>

<p>The bowl of soup on the left is Imitation Shark Fin Soup. This has no actual shark fin in it, and instead the shark fin is replaced by clear rice noodles, since actual shark fin can sometimes have a similar consistency to it (to be honest, actual shark fin is rather tasteless). The key ingredients in the soup itself is chicken stock, chicken, various types of fungus, and dried scallops, and soy sauce. The dish on the right is Shaomai. Not to be confused with the kind at Dim Sum &#8211; this is the street food version, which is made of similar ingredients as the fish balls above.</p>

										<content:encoded><![CDATA[<p>My flight back happened to have a 12-hour layover in Seoul, so I got the chance to check out Seoul again. If I had more time, I would have ventured out a bit further. Instead, I just stayed around Myeongdong and got to eat all kinds of street food.</p>
<p>Coming from Hanoi and their warm weather, I walked around in shorts in Seoul even in the cold while everyone was out with their winter clothes. People must&#8217;ve thought I was crazy. My flight landed early in the morning too, so I had to kill 2 hours before shops actually opened.</p>
<p>At the time, I had not realized that a massive protest against the government had been happening in Seoul (<a href="https://en.wikipedia.org/wiki/2016_South_Korean_protests" target="_blank" rel="noopener">wiki</a>). If I had known, I would have totally gone there instead!</p>
<p>Myeongdong looking quite festive this time of year!</p>

<p>This is Budae Jjigae. It is probably my favourite kind of Korean food. It&#8217;s got a spicy soup base, meat, mushrooms, and other things with instant noodles. It&#8217;s so simple, but so good.</p>

<p>The thing I realized that day is that the street market people can haggle in at least 3 languages: Korean, English, and Chinese, as opposed to just the native language, and English like a lot of other places. Good on them for learning all these numbers in different languages!</p>

<p class="wp-block-paragraph">Okonomiyaki (お好み焼き) is a sort-of pancake that is made with batter, soba noodles, cabbage, meat, mayo, and really anything that people want in it. The &#8220;okonomi&#8221; part of the word means &#8220;whatever you like&#8221;, and &#8220;yaki&#8221; means &#8220;grilled&#8221;. This was at a place called Micchan (みっちゃん), which is one of Hiroshima&#8217;s most famous okonomiyaki chains, but my friend who has lived in Hiroshima for a bit told me that there were definitely better places to eat Okonomiyaki.</p>

<p class="wp-block-paragraph">We visited the Atomic Bomb Dome (原爆ドーム), which is a building that symbolically represents the destruction of the atomic bomb. When the bomb exploded in the sky over the city, over 70,000 people died instantly. Some buildings managed to remain standing, and this was one of them. On one hand, it is a sad reminder of the history&#8217;s tragic past, and on the other hand, it speaks of the horrors of the use of atomic weapons. It was quite rainy that day, which added to the depressing effect of the history of the tragedy.</p>

<p class="wp-block-paragraph">At the Children&#8217;s Peace Monument, there is a statue of a little girl holding up an origami crane. It commemorates a Sadako Sasaki, who was two years old at the time when the bomb dropped. Before her death from Leukemia at the age of 12, she folded 1,000 origami cranes, which according to an ancient Japanese legend, would grant her one wish. On the day we visited, a large group of people gathered around the statue reciting something together, presumably, the story of Sadako Sasaki.</p>

<p class="wp-block-paragraph">The purpose of the museum is to tell the story of Hiroshima, so that the same thing does not happen again anywhere else in the world. One of the artifacts at the museum is a simple watch, but it is stuck at the time 8:15, which is the time of the detonation.</p>

<p class="wp-block-paragraph">As a plea to end the use of nuclear weapons, every mayor of Hiroshima sends a letter of protest to the country that performs any nuclear testing. There is definitely still more work to be done before this goal is reached.</p>

<p class="wp-block-paragraph">One of my friends, who had spent 10 months in Hiroshima, had the idea of cooking Okonomiyaki.&nbsp; It consists of a batter cooked like a crepe, but with soba noodles, cabbage and eggs plus whatever people feel like adding (cheese, bacon, etc.) with Japanese mayonnaise, okonomiyaki sauce, green onions, and katsuobushi (the dried fish flakes) on top.&nbsp; My friend bought all of this stuff at this Japanese grocery store in his home town.</p>



<p class="wp-block-paragraph">To begin, we started off by chopping up the cabbage, green onions and making the batter.&nbsp; Since my flat did not have a large enough bowl, we ended up making the batter in a cooking pot.&nbsp; It was quite difficult stirring the batter while adding in the flour without everything spilling.&nbsp; Chunks of flour would always get stuck on the side of the pot too.&nbsp; Once we finished the batter and cut up the veggies, we took out the teppanyaki grill.</p>

<p class="wp-block-paragraph">At first, we didn’t oil up the surface before we started using the batter for the crepe layer, so it ended up sticking.&nbsp; We couldn’t separate it to flip it either.&nbsp; When we tried, we tore up the entire layer so bad that we didn’t try to proceed with that one.&nbsp; We poured on some more batter and tried again, and the second time around, it worked slightly better – at least not so bad as the one before.</p>

<p class="wp-block-paragraph">We added the cabbage on a vacant part of the grill and let the cabbage and crepe cook for a while before flipping the crepe over the cabbage.&nbsp; We learned later that it was better to throw the cabbage directly onto the crepe and let both parts cook together.&nbsp; Afterward, we started frying the Soba noodles.&nbsp; We took the entire slab of noodles and spread it out as best we could on the grill.</p>

<p class="wp-block-paragraph">Once the cabbage was sufficiently cooked, we moved the whole slab of cabbage and crepe and stacked it on top of the noodles and let that cook for a while.&nbsp; Next came frying the egg.&nbsp; We cracked the egg over the grill, popped the yolk, and swirled it around for a little bit to spread out the leaking yolk.&nbsp; In the end, the egg just looked like a badly scrambled egg.&nbsp; Then, we scooped up the stack of noodles, cabbage, and crepe and placed it on top of the egg.&nbsp; After letting the egg cook until it was done, we took the entire stack off the pan.&nbsp; We added okonomiyaki sauce, mayonnaise, katsuobushi, and green onions.&nbsp; As we added the katsuobushi on to the okonomiyaki, we could see the individual flakes shrivelling up due to the heat.</p>

<p class="wp-block-paragraph">Between the layer of egg and crepe was soba noodles and cabbage.&nbsp; We made others with different ingredients like cheese and bacon.&nbsp; It was probably super fattening, but it tasted so good.&nbsp; The sauce made it taste 10 times better.&nbsp; I don’t know how Japanese mayonnaise is different from regular mayonnaise, but it’s definitely better.&nbsp; We had enough ingredients to make 10 of them, so that each person could have two each.&nbsp; As we kept cooking them, we got better and better at lifting the stack and flipping it.&nbsp; The end product tasted so delicious and eating two of these filled me up real good.&nbsp; I’m totally going to try and find a restaurant that makes these in Vancouver or if I’m feeling up for it, I can make it myself!</p>

<p class="wp-block-paragraph">The day after going to Munich, some of my friends and I went to eat some traditional Japanese food.&nbsp; We went to a restaurant called Tokio Dining (<a href="http://www.tokiodining.de" target="_blank" rel="noopener noreferrer">http://www.tokiodining.de</a>) and at the time they had a deal (until the end of June) where the first 20 bowls of Miso Ramen served each day would be half price.&nbsp; I actually went to this restaurant once before, but for some reason I never blogged about it the first time.&nbsp; As I kept writing this, it sounded more and more like a restaurant review.&nbsp; Either way, the food was so good the first time I went, I decided to go again.&nbsp; It was the best Japanese food I’ve ever had.&nbsp; And by Japanese food, I don’t mean sushi.</p>



<p class="wp-block-paragraph">I’ve never had Japanese food in Japan before, but I’d say this place was the closest thing.&nbsp; As we walked in, the chefs greeted us in Japanese, and if I knew how to reply in Japanese, I totally would have done that.&nbsp; When we went in, we were the only people there and that usually says something about how good the restaurant is, but not for this place.</p>



<h1 class="wp-block-heading">Jasmine Tea</h1>



<p class="wp-block-paragraph">Unlike Japanese restaurants in North America, they do not serve green tea to all their customers by default.&nbsp; It might be a German thing where they like to charge for every drink – even water.&nbsp; I ordered their Jasmine tea since it is one of my favourites.&nbsp; They served it in a very traditional looking (at least to me) teapot with a teacup.</p>

<p class="wp-block-paragraph">In addition to looking good, it also tasted good.&nbsp; The tea had been steeped for the right amount of time for it to have flavour and yet not have taste that was too concentrated.</p>



<h1 class="wp-block-heading">Edamame</h1>



<p class="wp-block-paragraph">My friend had this the first time we went and this dish was perfect for him because he is a vegetarian.&nbsp; Edamame is a dish that has immature soybeans that have been boiled in water with a little bit of salt.</p>

<p class="wp-block-paragraph">I tried a little bit and it was pretty good.&nbsp; I can’t say that it’s super delicious or anything because I’m a huge fan of meat.&nbsp; It was pretty fun trying to get the beans out of the pod though.</p>



<h1 class="wp-block-heading">Takoyaki</h1>



<p class="wp-block-paragraph">The appetizer I had the first time I went was the Takoyaki.&nbsp; It is a dish that has a ball-shaped pancake with grilled octopus meat as filling.&nbsp; It is also served with Japanese mayonnaise, takoyaki sauce, katsuobushi (dried fish flakes), and green onion flakes.&nbsp; The restaurant served it in a wooden boat shaped dish, which made it extra cool.</p>

<p class="wp-block-paragraph">When I bit into one of the takoyaki balls, the pancake layer felt so soft and delicious.&nbsp; The octopus part was even better, but I think I say that only because I’m a huge fan of octopus meat.&nbsp; The sauce and the fish flakes made it even better.&nbsp; As I’m writing this part, I’m craving more of it.</p>



<h1 class="wp-block-heading">Ikura</h1>



<p class="wp-block-paragraph">Ikura is the Japanese word for roe, which are basically fish eggs.&nbsp; The restaurant called it Ikura Oroshi and the word Oroshi apparently means a strong wind blowing down a slope (if I got the context correct too).&nbsp; I guess it makes sense when considering how it was served.&nbsp; It was served on a small mound of water chestnut with the caviar on top.&nbsp; On the side of the mound, there were a few strips of sliced cucumber and I guess that would represent the wind.&nbsp; I never realized how much sense the name of the dish made until I looked it up while writing this part.</p>

<p class="wp-block-paragraph">The dish was really small, but that makes sense because roe is quite expensive to serve in large volumes.&nbsp; When I bit into one of them, they just pop as my teeth sinks through the outer protective layer and when that happens juice comes out.&nbsp; It had the coolest mouthfeel.</p>



<h1 class="wp-block-heading">Miso Ramen</h1>



<p class="wp-block-paragraph">Our main dish was the Miso Ramen.&nbsp; The noodles had a soup base made of miso (hence the name) and was served with a slice of pork.&nbsp; It also had other ingredients such as bean sprouts, seaweed, half a boiled egg and corn.&nbsp; All of that made the noodles so much more delicious.</p>

<p class="wp-block-paragraph">The noodles were soft yet chewy in a way and that was perfect for my tastes.&nbsp; Many people think that the instant ramen and this kind of ramen are similar, but their only similarity is that they’re both noodles with the same name.&nbsp; They taste completely different.&nbsp; Although the dish was kind of small, everything in it was so good that I ate all of it – even the soup.&nbsp; While I was eating this, I faced a dilemma.&nbsp; In Japan, it is customary to slurp the ramen loudly to show appreciation of the food, but in western countries nobody does that.&nbsp; In the end, I just slurped it like how I normally ate noodles (something like in between the two extremes), while my friends were really careful about making any slurping noises.</p>



<h1 class="wp-block-heading">Conclusion</h1>



<p class="wp-block-paragraph">Everything here was so good that I would want to go there to eat all the time until I get sick of it.&nbsp; I never thought I’d be going out for Japanese food while in Germany, but I think this worked out really well.&nbsp; On our way out, we said thank you to the chefs there in Japanese.</p>



<p class="wp-block-paragraph">When I go back to Vancouver, I will try to find another restaurant that is on par with this if not better.&nbsp; That shouldn’t be too hard since Vancouver does have amazing Japanese food.</p>

<p class="wp-block-paragraph">The bacon looks a little raw, but I cooked it for too long so it became crunchy.</p>



<p class="wp-block-paragraph">Then later, after trekking for about 20 minutes in the cold (-4 degrees Celsius), I bought this from the supermarket that actually sold some real Asian stuff:</p>

<p class="wp-block-paragraph">Since coming here, I found no food (debatable whether this can be called food) from Asian brands that I’m familiar with.&nbsp; But not anymore!&nbsp; I know where to buy my cup noodles and Pocky substitute!&nbsp; The Pocky is still from the same company in Japan, but for some reason it’s not called Pocky, although it looks the same.&nbsp; I also like the fact that the labels are in German.&nbsp; I know it’s supposed to be like that, but I’m not used to seeing the labels in English.</p>
