I always thought that Petra was just a single structure – the same one that gets shown everywhere, but that structure is just The Treasury that’s a part of an entire city built in the rocks.

From the entrance, we walked 30 minutes through a winding gorge formed by a fault line that tectonic forces split apart until we reached The Treasury. Stray dogs followed us every step of the way hoping for scraps of food. Leaving at 6:00 didn’t help because the only people that the dogs could beg from was us.

We arrived so early we were practically the only people there. We admired Petra on our own without the large crowds of tourists everywhere. We took our time walking up to it, all around it, up the slope to get a better view (nobody is allowed inside it though). We did all of this before the crowds showed up.

Petra was the capital of a kingdom of the Nabataean, a group of nomadic Arabs who established the city as a major trading hub. The Nabataeans constructed massive structures by carving it all out of the sandstone. Although it’s called The Treasury, the building is believed to have been the mausoleum of the Nabataean King Aretas IV.

The area around Petra is also home to the Bedouin people, a group of nomadic Arab people who inhabit the desert regions in northern Africa and the Arabian Peninsula. In the modern times, many have abandoned their nomadic lifestyle and many Bedouin around Petra work as tour guides, offer camel rides, among other things. One of the Bedouin people there is actually the descendent of a woman from New Zealand who married a Bedouin man and wrote about it, called Married to a Bedouin.

The area is over 250 square kilometers, something I totally didn’t expect (because I totally did not do my research before I went). I’m not too big on hiking and I was totally not prepared for a hike that day – I would have totally brought more water, and more food along with me that day. Despite that, I hiked up the 900 or so steps to the monastery anyway, while getting hassled by vendors trying to sell me their junk. Temperature-wise, the temperature shot up to a whopping 20 degrees Celsius from the 0 degrees Celsius just two days before. My body did not like that.

We spent about 8 hours in Petra, walking along the rock faces, seeing the ancient ruins, hiking up the hill, but if I had more energy I totally would have hiked up the other trials for even better views of the area.

For dinner we had mansaf, probably the national dish of Jordan. It’s a delicious dish made with lamb and rice dish mixed with a yogurt sauce! This tasted even better than the chicken rice dish we had the day before. I had no idea that lamb and yogurt was such a great combination. It was a great meal to refuel after such a long day.

Duisburg

This is a walkable rollercoaster! Its only purpose is as an art installation for city beautification. The track is a walkway with stairs, but the loop is off limits.

Next door is a nuclear plant though. Makes me a little nervous after watching that HBO show about Chernobyl.

Arnhem

Now we’re back in the Netherlands, in the city of Arnhem. During Operation Market Garden in World War II, the western Allies attempted invading Germany through the Netherlands. Allied soldiers (mostly British) attempted to secure key bridges throughout the country; one of which was in Arnhem. The operation ended in disaster, and the Allies failed to advance in to Germany.

The John Frost bridge was constructed on the same location as the old bridge that was destroyed by bombings after Operation Market Garden. John Frost was the leader of the group of British paratroopers that actually arrived at the bridge during the battle. The Airborne Museum in Arnhem is dedicated to the Battle of Arnhem, but it was closed for renovations (out of all the war related museums we went to on this trip so far, most of them ended up being closed…). The city centre itself has the same vibes as other cities in the Netherlands.

Our day was shorter because of our flight, but our next destination gets even more exciting: Israel, Palestine and Jordan.

Heidelberg

Heidelberg probably has the most picturesque old town in the entire Germany. Out of all the views I’ve seen in Germany, this is one of the best.

The view is from the ruins of a castle that was destroyed during the Thirty Years War (17th century). I believe the old town is mostly in the Baroque style.

For breakfast, we had a very traditional German pastry, known as a Berliner. It’s similar to a doughnut, but without the hole, and it has a jam filling on the inside and powdered sugar on top. They’re super delicious and not insanely sweet like a lot of American doughnuts.

For lunch, we had more traditional German street foods. The top of the bottom image is currywurst, cut up sausage with curry ketchup on top. The flavour is a very savoury sausage with a slight sweet and spicy zing of curry. The bottom of the image is a bratwurst in a breadroll with mustard. Everything about this is better than the American hot dog. Better sausage to bun ratio, better bread, better sausage, and better mustard. And of course, fries are seasoned with mayonnaise instead of ketchup.

After lunch, we drove up the hill across the river from the old town and visited an old ampitheatre. Why is this amptitheatre interesting, you might ask? It’s actually a relic of the Nazi period for holding propaganda performances.

The main allure of Heidelberg itself is its picturesque views both in the old town and up on Heidelberg castle. Visitors can easily enjoy this by strolling through the old town and making their way up to the castle (there is also a tram), which are main attractions of the city.

Zweibrücken

From Heidelberg, we drove to Zweibrücken. It was a slight detour from Luxembourg, where we were actually trying to go, but we had read about a cool observatory decorated like R2D2, so we thought we’d check it out! It would have been cool to look through the telescope – after all the sky was completely clear of any clouds.

Driving to the place was super scenic! Nice rolling countryside hills with towering wind turbines.

From there we continued our drive to Luxembourg.

Luxembourg

We crossed the border into Luxembourg at dusk and stopped by the town of Schengen. This is the place where the Schengen Agreement was signed – the agreement that removed the hard borders between its European member states.

Normally, it’s possible to walk across to the island to see the small exhibit that discusses the Schengen Agreement, but we were super surprised to see the river at such a high tide (it did rain a lot the past couple of days). On the right of the picture, there’s a little shrub, street signs and flagpoles poking out of the water.

By the time we reach Luxembourg City, it was nighttime. To our surprise, the city looked deserted even though it was only 19:00. People walking on the street appeared drunk. There was even a guy taking a leak in the street without even trying to do it in an alley!

We walked around a bit to check out the town, but otherwise, there wasn’t much to do at that hour on a weekday.

We didn’t stay too long in Luxembourg, and we continued our drive to Bastogne, where we’d stay the night.

The first stop is a food market not far from where we stayed. The curry dish isn’t as spicy as it looks and is very flavourful. The beef noodles is pretty similar to pho, but with their Thai spin on it with the herbs that they use. I’d say it had a bit more umami than the typical pho. The Pad Thai I thought wasn’t as flavourful as I liked, and was actually kind of plain. The other two dishes are highly recommended though!

As far as fruit smoothies go, the fruit seemed to be so much more flavourful. I know that with bananas they are harvested before they’re riped so they can last for a few weeks as they are transported, so it’s possible the same thing is happening with these fruits. But since these fruits are local, they get to fully ripen on the tree.

I also saw them add a little bit of salt to enhance the existing sweetness and acidity of the smoothies. It made it perfectly sweet, without being overpowering.

Next is probably the most famous dish in northern Thailand: Khao Soi. It’s a noodle dish with soft noodles in the soup and deep fried noodles on top. The soup itself can vary in spiciness, but is made of a curry-like sauce with meat, chilis, lime, and coconut milk.

The main attraction about this dish for me is the spiciness of the soup. It isn’t just a big spicy attack on the senses, but rather it’s nuanced because it’s balanced by the coconut milk.

Last but not least, we had some tom yum, yellow curry, and morning glory. This place is an actual restaurant with western style ambience, so naturally there was a price premium to that.

It’s kind of difficult to comment on how the yellow curry and tom yum tasted because it was way too spicy for our senses. I definitely tasted the spiciness and sourness of the soup, but the spiciness overpowered me quickly. The best by far as the morning glory. I just really like leafy greens with crunchy stems. The chilis added gave it a slight zing.

Aside from the store, there is also a museum section full of more weird things – the only difference being that these items are not for sale. Like this two-faced goat for example.

I don’t even know how they find this stuff.

I gotta say that this place was one of the biggest highlights of the trip. Most of the places I went were standard tourist attractions, but THIS place definitely takes the cake as far as how bizarre and interesting it was. I think a lot of people would be interested to look at stuff like this, it’s just that this place isn’t that well known.

Before my trip, I had no clue what there was to see in Toronto except the CN Tower, and Niagara Falls, which I had already been to. Luckily, this reddit post helped me find few places less traveled.

Royal Ontario Museum

It’s a museum that displays different elements of world culture, art, and natural history. Think British Museum, but much much smaller. One thing the ROM has that a lot of museums don’t are dinosaur fossils! There other exhibits showing world history and culture as well.

Thomas Fisher Rare Book Library

Located on the University of Toronto campus, this library is Canada’s largest repository of publicly accessible rare books and manuscripts in Canada. Among its collection is a copy of Isaac Newton’s Principia from 1687.

Ripley’s Aquarium of Canada

This aquarium is exactly what you’d expect. Lots of different kinds of exotic sealife, sharks, manta rays, etc. The main exhibit is a giant water tank that contains these animals, and a giant conveyor belt takes guests all around. It’s a pretty good aquarium for those who are into that kind of thing

Casa Loma

This is one of the few “château”s in Canada. It was the largest private residence ever built in Canada and was the former residence of Sir Henry Pellatt, a former Major-General in the Canadian Forces. Now it has turned into a tourist attraction. The museum shows off similar things to what one would expect at a European castle: cool architecture, fancy decorations in just about every room, paintings and other art, antiques, and a garden.

And of course, a giant wine collection.

SkullStore Oddity Shop

This place is SUPER out there. This is a store that sells the skeletons of random animals, the skin of snakes, human remains (bones, preserved brain, etc.), taxidermy, preserved bugs, etc. All cruelty free and legally harvested apparently. Half of the store is an actual shop selling these strange items, and the other half is a free museum of even more weird things that aren’t for sale

The Half House

This half a house just sits on the side of the street like any other building. There isn’t a sign explaining why this is, what it’s doing there or anything like that. According to this site, it’s part of the remnants of the neighbourhood that once was here, where the owners at the time sold only half the house, and so the rest of the community developed around it.

St. Lawrence Market

This place felt similar to something like Granville Island in Vancouver, or Pike Place in Seattle – a farmer’s market positioning itself on selling fresh local meats, seafood, produce, etc. It’s a bit out of the way from the downtown core, and when I went, it was almost closing time, so it wasn’t very busy.

The one thing this place has over other farmer’s markets I’ve seen (at least in Seattle and Vancouver) is the variety. If you zoom in on that picture, below, you’ll see what I mean.

Restaurants

Toronto is Canada’s largest city, and therefore has a lot of offer in terms of food. Of all the places I ate at, these two places were definitely the best.

La Palette

This is a French style restaurant near the Kensington district of Toronto. It’s got an interesting selection of game meat, which was the reason why my buddy and I went. They’ve also got a good selection of wine and staff that are knowledgable about it.

For those wondering, horse doesn’t have a strong flavour like beef does, and it chews like super tender beef. Elk on the other hand, tastes kind of like steak with a bit of gaminess, and is actually quite hard to tell the difference unless you’re someone with really sensitive taste buds

Diana’s Seafood Delight

This place is known for their quality oysters and sea urchin, and also precisely the reason why we were there. They have a selection of different oysters from different areas, but if you gave me a blindfold and asked me which oyster was which, I wouldn’t be able to tell you.

For one reason or another, I never made it out to Saint Joseph’s Oratory the other times I visited. According to my cousin, “it’s one of the best free attractions in Montreal”.

Saint Joseph’s Oratory is Canada’s largest church, and it enshrines a statue of Saint Joseph within it, I wasn’t able to take a good photo myself of the the oratory in all its beauty, so here’s one from Wikipedia.

We weren’t allowed to go inside the main nave (where the people sit in church) of the basilica since it was closed for an event. But we were able to go to the Crypt Church on the floor below.

The statue of Saint Joseph is located in the Votive Chapel. People all over come here as a pilgrimage to pay their respects.

Since Saint Joseph’s Oratory is located on Mont Royal, there is a viewpoint nearby to look into the city.

A short hike from there was the Mount Royal Cross. The temperature was only slightly below freezing, so it wasn’t as cold as I expected Montreal to be. I was told that it’d get much much colder in January and February.

The next place we went to was Old Montreal. It was pretty dead, even for a Sunday afternoon. It makes sense since I’m way past the busy tourist season! In the summer, all the restaurants set up patio seating outside, but it was too cold to do any of that in November.

Lastly, I went to the Underground City. Like a lot of cities that get really cold, the city has built a network of underground tunnels so that people can avoid walking outside in the cold winter. Some parts of it are actually really nice!

One of the places I wanted to go on this trip was the Biodome, which tries to recreate different ecosystems in the world to display various plants and animals that live there. Unfortunately, it doesn’t reopen until summer 2019.

STP 2017

In the summer of 2017, two friends and I rode STP over the course of two days (this was my first cycling event ever). At the time, I didn’t really know how to train other than just riding a lot of miles and I never really gave any conscious thought to hydration or nutrition. I clocked in about 1500 km over 70 hours of training from March till July (which was totally below what the official training plan called for).

On the event day, I ate whatever there was at the rest stops and drank the electrolyte drinks. I also ate this supplement called SportLegs that people were giving out. They supposedly improve muscle performance (however, sports dietitian thinks they’re more placebo than anything). I didn’t know anything at the time, and I just ate them anyway.

We were worried that our legs would be too sore to continue on the second day, but on the morning of the second day, we didn’t feel fresh, but nonetheless we made it through both days (with both legs still working!) and we were super happy with ourselves for having accomplished this. We joked that maybe it was the SportLegs (to this day we still don’t know). As we crossed the finish line, I said to my friends, “OK so we’re going to do STP in one day next year right?”. They thought I was joking, but I wasn’t.

The problems begin

The next event that summer was Obliteride 2017, a century ride to raise awareness and fundraise to fight cancer. I figured that since I had done STP, I’d be able to do this ride no problem. This is where problems for me started.

Around the 50 km mark, I started cramping up a little bit, and I still had 110 km to go. I started drinking much much more of the electrolyte drinks and eating, but the cramping just got worse and worse. It’s not that I didn’t have the strength – but each stroke I took, I felt the cramps. But the cramps weren’t SO bad that I couldn’t continue – I just had a terrible finish.

I went to see a physiotherapist to see what was happening, and she took a look, and she could only identify a slight pelvic rotation (my hips were leaning to one side of the bike), but she didn’t think that was the root cause. She couldn’t see anything wrong with the bike fit either, but thought it could have been a lack of training since Obliteride was much hillier than STP. I did the exercises she asked me to do and that was about it. I had also signed up for the Whistler GranFondo and Chilly Hilly as well, but I couldn’t even finish either of them. At one point, my entire right leg locked up on me and I couldn’t bend it for a couple of minutes. I began to worry if I could even continue cycling anymore.

Tackling the problem

I was so fed up with this problem, that I scheduled appointments with different doctors in sports medicine to get their advice. They all suspected that it was a nutrition problem and referred me to a sports dietitian. At my first appointment with the dietitian, she asked me about my lifestyle, how much I ate, exercised, etc. and immediately said, “you’re not eating enough for the exercise you’re doing” (I estimated that I was eating about 2200 calories/day). She wrote out on the whiteboard a high level guideline as to how I should eat.

I saw her for about a month and a half and after following her advice, my problems were solved! In a way, I got the OK from the nutritionist to eat as much as I want, even massive amounts of sodium and sugar, provided that I keep up my level of exercise. Knowing that eating more was the fix, I had no problem with that.

She also got me to measure my sweat rate, so I’d know how much water to replenish during big rides.

Training for STP 2018

I rode sporatically in the winter (I should have followed Rule #5 of the Velominati) and didn’t really start training seriously until June. From January to May, I clocked in only 848 km over 38 hours, which was only a bit less than year before at the same time, but I had started earlier in the year this time.

I made a plan for myself where I would do intervals twice a week with a big ride on the weekend (in June alone I clocked in 577 km over 25 hours). Two of the big training rides I had were century rides, where I got to work out the specifics in my nutrition and hydration plan. In total, I rode about 1600 km over 73 hours, not counting the intervals.

Three weeks before the event date, I started sleeping earlier and earlier (by about 15-30 minutes each day) to get myself used to waking up early since I would have to be on the road by 5:30am on event day.

Two days before the ride, I started carb loading (as per instructions from the dietitian).

My emotional state

I didn’t like the fact that training took so much time out of my week. I was already spending 10+ hours on the saddle, and I was beginning to feel mentally tired from all willpower required. The intervals drained me mentally even more because of the mental focus I needed to force myself to spin as hard as I could. It’s so easy to just stop when things get tough, and interval training was more mentally draining than any training ride I did.

As the event date drew closer, thoughts of my possible failure creeped into my mind, getting stronger day by day. I couldn’t think of anything else. I thought back to the wise words of Sun Tzu:

If you know the enemy and know yourself, you need not fear the result of a hundred battles. If you know yourself but not the enemy, for every victory gained you will also suffer a defeat. If you know neither the enemy nor yourself, you will succumb in every battle.

知彼知己，百戰不殆；不知彼而知己，一勝一負；不知彼，不知己，每戰必殆。

I even started meditating to calm my mind. My coworkers could tell that I was more distracted than usual and provided me with good encouragement.

Race day

My friend and I started the ride around 5:30 am, and because there were so many cyclists on the road, drafting propelled us quickly and we made it to the halfway point around 2:30 pm. I still felt pretty fresh at that time which was good.

I knew that most riders do the ride in 2 days, so I expected not to be able to draft behind other riders. By about 200 km, I started feeling tired, but I knew I had to keep going. There was still 120 km to go.

I wasn’t having fun anymore. At this point, it was just a grueling grind to the finish, where the finish line was hours away. I wanted the day to be over. and thought to myself, “this too shall pass”. Looking at my bike computer frequently to see how far we’ve gone made it worse – slowly watching the distance ticking upward while thinking “when will this end?”

The temperature that day went up to a max of around 38 degrees Celsius. We rode in the burning heat, slowly becoming more and more dehydrated. I wanted the sun to set faster, so that it’d be cooler.

Judging by the dozens of people we saw at rest areas, we figured our pace was pretty good. But as we went further along, there were less and less people at the rest stops. Either they bailed, or they were much faster than us.

The finish line would close at 9 pm, and there was no way I’d get to the finish line in time. I wish I had trained harder.

For most of the last third, we rode mainly on our own, occasionally seeing another rider, whom we’d ride behind just to get an extra bit of a boost.

At the last rest area, there was almost nobody, maybe like a dozen people at most, but we were only some 25 km away. We could do this.

My friend and I would swap taking the lead every five minutes so that we could balance out the wind load between the two of us. The fact that the two of us rode together allowed us to talk to each other and help lift each other up. I think that helped a greal deal mentally and emotionally.

At dusk, we finally entered Portland. We were now just 30 minutes away from the finish line. We joined a group of other riders and rode together till the end.

I called out to the other riders with encouraging words like, “yeah! We’re almost there wooo”, but looking back I think I sounded too happy (despite my true feelings of misery) and the people around me probably thought I was a jerk for being so happy while they felt miserable.

Finally we reached the finish line at 10:30 pm. People were still there and cheering us on as we arrived. I almost shed a tear. I was overjoyed having finally achieving this goal.

Other friends who drove to Portland met us at the finish line and could see our happiness despite how filthy we were. We weren’t even hungry nor thirsty. We were in no mood to do anything. We just wanted to sleep. My friend was told that he sounded brain dead because he replied with one word answers and lacked the concentrated gaze that he normally had, whereas I was still considered having a sound mind.

The next morning, I woke up with quite the hangover even though I drank no alcohol. I was just REALLY REALLY dehydrated from the bike ride in the blazing heat.

After this entire ordeal, I told myself, “I’m not going to do this again next year”. I didn’t get back on the bike until late August – I think STP scarred me a little bit. I definitely don’t regret having done this at all, and I’m still very proud of what I did.

Breakfast

Hong Kong breakfast is what I crave, and a lot of it is simple enough to make at home without too much effort with the exception of Dim Sum.

These are all Dim Sum dishes, typically cooked by steaming. On the bottom left, there is Shaomai, which is a dumpling containing pork and shrimp. This particular variety is what is most well known in English speaking countries, and actually has its roots in Inner Mongolia. Clockwise (ignoring the half eaten dish) is steamed ribs in black bean sauce. Top right is either a Chiu Chow dumpling or a chive dumpling, but they are both similar in that they both contain vegetables, fungus, and sometimes pork. Bottom right is a shrimp dumpling. Bottom middle is a steamed meatball. It contains beef and water chestnut and other seasonings and is served with Worcestershire sauce.

Another classic in Dim Sum – this are steamed rice rolls. The white part is made of a wide strip of rice noodle usually with filling from shrimp, pork, or beef, and the sauce on top is soy sauce.

The sight of chicken feet as something edible frequently scares foreigners. Rather than just calling it chicken feet, it’s commonly known as Phoenix Claw. It’s prepared via a complicated process of frying, braising, simmering, and steaming – one of the most difficult Dim Sum dishes to make.

The top left is the usual eggs, ham, and bread (in this case garlic bread).  The middle is Satay Beef Noodles.  Satay refers to cooking meat with a spicy, sweet, peanut sauce that originated from Indonesia.  The noodles in the picture are just rice noodles, but it doesn’t have to be.  The top right drink is Hong Kong style milk tea.  It’s similar to the British style of black tea with milk and sugar except that the Hong Kong variant uses condensed or evaporated milk – I would drink this over coffee any day of the week.

This is a pineapple bun with a slab of butter inside it (the bun is served warm so the butter slowly melts inside of it). The bun doesn’t actually contain pineapple, but it the crunchy top can sometimes resemble a pineapple. The bun itself tastes like a regular bun, but the top adds a slight sweet flavour, and of course there’s the flavour of melted butter.

The bowl of noodles is just regular instant ramen noodles (typically Nissin 出前一丁 noodles) in the restaurant’s own soup with a deboned chicken drumstick. This dish is often served with fried eggs and Spam instead of chicken.  The drink to the right is Horlicks, a malted milk drink. It’s often associated as a kid’s drink, but still enjoyed by adults.

The dish on the left is macaroni in chicken broth with ham slices. I ate this a lot growing up and for some strange reason a lot of non-Asian people I’ve explained this dish to think it’s gross. The dish on the right is the typical egg, sausage, and toast, and the drink up top is milk tea.

Congee is a popular breakfast dish and it’s common to add all sorts of different ingredients like fish, chicken, pork, Chinese doughnut, etc. The one above is congee with Chinese doughnut, fish balls, beef balls, and peanuts. Another popular one has lean pork and century egg.

Lunch/dinner

Food is cheap enough in Hong Kong such that people are okay with buying food everyday rather than cooking at home!

Hotpot is probably my favourite. Take a broth (beef, chicken, fish, spicy, or whatever) and just cook whatever you want inside it. Traditionally, the entire table all share one giant pot and everyone cooks their food inside it, but in recent times, having one small hotpot per person is becoming more popular.

These two dishes are classics in Hong Kong “Cha Chaan Teng” (茶餐廳) establishments. The one on the left is Baked Portuguese Chicken Rice. It’s not actually Portuguese and has its origins in Macau (just a ferry ride away from Hong Kong!), which was a Portuguese colony at the time. It’s essentially chicken and potatoes on top of fried rice in a creamy sauce with spices (e.g. turmeric, cumin, etc.), coconut milk, and chicken broth. The one on the right is Baked Pork Chop Rice. It’s baked in the same way as the previous one, but it’s fried pork chop and tomatoes on rice with a slightly sweet, cheesy, tomato sauce – one of my favourites. The drink is a lemon tea, which in this case it’s black tea with lemon slices and sugar.

The dish on the left is a roasted goose. It has the consistency of chicken, but has all dark meat and a more intense flavour than chicken. The dish on the right is poached chicken and roast pork belly on rice. Poached chicken might sound strange to some people, but it is actually quite flavourful if the brine is made well and the chicken is of high quality. The poached chicken is typically eaten with a sauce made of minced green onion, ginger, and oil. Roast pork belly is special mainly because of its thick crusty skin.

This is poached chicken and barbecue pork on rice. The poached chicken is the same as before and the barbecue pork is the same that is available in North America.

This is Claypot Rice. It’s essentially rice, meat, and soy sauce among other things all steamed together, but it doesn’t count unless there are crusty bits of rice on the side of the bowl formed from the steaming.

This is Wonton Noodles. The Wonton is the dumpling with shrimp and vegetables (one could argue that the above isn’t an actual wonton due to the shape of the dumpling, but let’s not get into technicalities), the noodles themselves are egg noodles cooked al dente, and the soup is usually derived from fish. The soup itself has flavour, but not so much so that it doesn’t overpower everything else.

These are also typical noodle dishes. The one of the left is beef brisket in a beef soup and the other is fish balls and fish tofu in a fish soup.

This is wonton noodles with beef balls. Good for a quick meal.

Some might tell you that the dirtier the place looks, the tastier it is.

Snacks

These are the street food style snacks. Huge ones that I’m missing here are bubble waffles and egg tarts unfortunately!

The bun on the right is the Pork Chop Bun, originally from Macau. It’s essentially a pork chop sandwiched in a Brazilian style bun (so-called piggy bun).

This looks like a dessert, but it’s actually served at some Cha Chaan Tengs. The white one is steamed milk pudding and the yellow one is steamed egg custard. It’s essentially milk or eggs with sweet flavouring (e.g. sugar, vanilla extract, etc.) that is steamed. It’s almost like a Hong Kong style crème brûlée.

This toast with butter and condensed milk. Very simple, but also very delicious.

These are fish balls. A lot of times they are made from processed fish, but can be made from fresh fish as well. Generally they are served a curry sauce, but they are also available in other types of sauces for people who can’t handle the spice.

The bowl of soup on the left is Imitation Shark Fin Soup. This has no actual shark fin in it, and instead the shark fin is replaced by clear rice noodles, since actual shark fin can sometimes have a similar consistency to it (to be honest, actual shark fin is rather tasteless). The key ingredients in the soup itself is chicken stock, chicken, various types of fungus, and dried scallops, and soy sauce. The dish on the right is Shaomai. Not to be confused with the kind at Dim Sum – this is the street food version, which is made of similar ingredients as the fish balls above.

Stockholm used to be just an island, and since Stockholm has expanded outside of the island, the island portion has become the old town, known as Gamla Stan.

Some buildings in the old town have fake windows, because glass was expensive back then (3rd floor middle window).

There’s a random piece of Viking runestone on the corner of a building. And it’s protected by a cannon barrel on the street corner…

The Scandanavian countries really like their royal guards…

H&M sells home products in Sweden! I haven’t seen that anywhere else.

At our hostel, we met some awesome people and went on a bike tour with some of them, guided by a local Swedish fellow. He took us to the top of a hill overlooking the river and Gamla Stan.

Welcome to Earth!!

Our guide showed us this cool snack. It’s herring with cucumber and onions on flatbread.

This was part of the common area at our hostel. They did a good job with that antique look and they even made us take our shoes off when inside.

At the Stockholm Royal Armoury, they showed off a bunch of carriages. Since we are nerdy engineers, we spent a while analyzing how its suspensions worked.

I heard Swedish meatballs are famous.

The Vasa Museum was probably the most incredible attraction. The Vasa was a Swedish warship that sank on its maiden voyage. It was supposed to be a symbol of Swedish military might at the time, but it sank because it was too top-heavy due to the many cannons it had on board and not enough width to counter the tipping of the ship from its weight. It was later discovered that the ship was very well preserved and now it is on display.

What is more Swedish than going to Ikea and eating meatballs? There is a free shuttle that goes to Ikea too!

The best part of the trip was meeting a bunch of cool people in our hostel room! We had a room of 8 and every single person was fun to hang out with as opposed to normally I don’t get to talk to everybody. This time, the 8 of us got to chill in the room having beers and stuff. One of them was from Kentucky who was currently living in Alabama – of course all the America jokes were directed at her. Another was from Australia who had just finished his contract with the ANZAC navy after serving in Afghanistan and Iraq – he was quite open in talking about his experiences and I learned a ton from him! I also learned a nice trick to cooking pasta from one of the Italians: always salt the water before cooking the pasta! He even said that people thought he was crazy when they saw him salting the water. I also got some good hookups in Shanghai from our Chinese roommate – awesome when I decide to go there! It was amazing how well we all clicked and definitely an unforgettable experience in my travels.
