<p class="wp-block-paragraph">We headed eastward across the Iberian Peninsula toward Gibraltar. The journey took us from the white-sand beaches and kite-surfing spots of southern Spain into a curious pocket of British sovereignty carved into the rocky coastline. What made this crossing particularly memorable was not just the destination, but the peculiar formality of leaving one zone and entering another: the Spanish border officer stamped our passport as we exited the Schengen area &#8211; this time the Schengen stamp had a small car icon in the corner, marking our vehicle&#8217;s departure.</p>

<p class="wp-block-paragraph">Gibraltar itself represents a geographical and political anomaly, a British Overseas Territory situated on the southern tip of the Iberian Peninsula, just across the Strait of Gibraltar from Morocco. As we drove closer, the landscape transformed completely, and soon we could see what defines the entire region: the Rock of Gibraltar towering massively above everything else, its limestone bulk rising over 400 metres above sea level.</p>



<h2 class="wp-block-heading" id="first-glimpse-europa-point-and-the-southern-edge">First Glimpse: Europa Point and the Southern Edge</h2>



<p class="wp-block-paragraph">Our initial stop was Europa Point, the southernmost tip of Gibraltar, a flat, rocky headland that marks the boundary between the Atlantic Ocean and the Mediterranean Sea. The point gets its name from the mythological figure Europa.</p>

<p class="wp-block-paragraph">Near Europa Point sits Gorham&#8217;s Cave Complex, a cluster of archaeological sites. The complex consists of caves situated at sea level, each containing archaeological and palaeontological deposits spanning over 100,000 years of Neanderthal occupation. In 2016, this site received UNESCO World Heritage status, earning its designation because of the exceptional evidence it holds about how Neanderthals lived. We tried making a spontaneous visit, only to be turned away as the site operates on an extremely restricted access system, with a three-year waiting list to gain entry for serious visitors. The limited access, while unfortunate for us, reflects the delicate nature of these sites, where any uncontrolled traffic would risk disturbing irreplaceable scientific evidence.</p>



<h2 class="wp-block-heading" id="the-monkeys-on-the-mountain-encounters-with-barbar">The Monkeys on the Mountain: Encounters with Barbary Macaques</h2>



<p class="wp-block-paragraph">As we ventured toward St Michael&#8217;s Cave, ascending the winding paths through the Upper Rock Nature Reserve, we began encountering the Rock&#8217;s most famous residents: the Barbary macaques. They represent Europe&#8217;s only free-living wild monkey population.</p>

<p class="wp-block-paragraph">Tourists constantly attempted to feed them, despite clear warnings. The animals have learned to exploit this human generosity, demonstrating remarkable problem-solving by unzipping bags and rifling through pockets in search of food.</p>



<h2 class="wp-block-heading" id="the-cathedral-beneath-the-rock-st-michaels-cave">The Cathedral Beneath the Rock: St Michael&#8217;s Cave</h2>



<p class="wp-block-paragraph">The path to St Michael&#8217;s Cave climbs steeply on a well-paved road for thirty minutes before reaching the entrance.  Several lookout points along the way made the walk up less of a grind.</p>

<p class="wp-block-paragraph">The cave system itself is a network of interconnected chambers carved over millions of years by rainwater slowly percolating through limestone. Today, the largest chamber functions as a space for hosted concerts, theatrical productions, and opera performances. The cave derives much of its visual drama from its extensive formations of stalactites and stalagmites &#8211; mineral-rich water dripping from the ceiling deposits layer upon layer of dissolved rock, gradually building downward from the roof while simultaneously building upward from the floor. Some stalactites hang like pale icicles; others have fused with stalagmites rising to meet them, creating continuous columns of mineral deposit.</p>

<p class="wp-block-paragraph">The name derives from a similar grotto in Monte Gargano, Italy, where &#8211; according to Catholic tradition &#8211; the Archangel Michael made an appearance. This connection explains why the cave carries religious significance despite being fundamentally a geological formation rather than a sacred site in the traditional sense.</p>

<p class="wp-block-paragraph">An installation called &#8220;The Awakening,&#8221; a light and sound show, transformed the cave into an additional cultural experience.  Within this light installation appears an ethereal figure &#8211; an angel formed by the projection mapping technology and the natural rock formations.</p>



<h2 class="wp-block-heading" id="moving-on-the-reality-of-a-short-stay">A Short Stay</h2>



<p class="wp-block-paragraph">Despite the natural and historical richness of what Gibraltar offers, we didn&#8217;t linger longer than a few hours. Tourism in Gibraltar often works this way &#8211; the territory is small, and its main attractions cluster around the Rock. Many visitors arrive on day trips from southern Spain, explore the key sites, and then depart.  We were no different.  We faced a 4.5-hour drive toward Granada, leaving Gibraltar behind and transitioning into the landscapes of inland Andalusia.</p>

<p class="wp-block-paragraph">The Galápagos Islands continued to impress us, and the expedition crew always managed to find something different for us to experience Rábida and Bartolomé offering entirely different experiences from the days before. From American flamingos in a secluded lagoon to volcanic formations and curious penguins, this day was packed with wildlife encounters and geological wonders.</p>



<h2 class="wp-block-heading">Rábida: Brackish Lagoons and Flamingos</h2>



<p class="wp-block-paragraph">Our morning began before breakfast with a nature walk on Rábida Island, known for its deep red volcanic sands and its brackish lagoon. The lagoon is home to a small population of American flamingos, one of the Galápagos &#8220;Big 15&#8221; species. Our guides told us the odds of seeing them were low, so we considered ourselves fortunate to catch several wading gracefully in the shallows.</p>

<p class="wp-block-paragraph">Among them was a juvenile with distinctive blue legs &#8211; a telltale sign of its age. We also got a good look at their black-tipped wings, which I never even knew existed. Flamingos, surprisingly strong fliers, most likely reached the Galápagos from mainland South America. One interesting fact the guides pointed out was how what looks like their knees are actually their ankles.  They get their pink colour from their diet.</p>

<p class="wp-block-paragraph">As we circled the lagoon, we passed a dead seal partially buried in the sand.  It wasn&#8217;t clear what caused its death, but we didn’t speculate, but it was a stark reminder of the harsh realities of nature. </p>

<p class="wp-block-paragraph">We returned to the ship for breakfast after our walk. One of the passengers had a health scare that morning; he collapsed on the ground as we were observing the flamingos due to low blood sugar. Thankfully, he recovered quickly. He was lucky that it didn&#8217;t happen when we were on more rugged terrain.</p>



<h2 class="wp-block-heading">Glass-Bottom Boat Ride</h2>



<p class="wp-block-paragraph">After breakfast, we boarded a glass-bottom boat to observe marine life without getting wet. While it sounded ideal in theory, the reality proved less comfortable. The rocking of the boat while staring down made it easy to feel seasick.</p>

<p class="wp-block-paragraph">Still, we managed to spot a vague silhouette of a shark, and a massive school of fish.</p>

<h2 class="wp-block-heading">Bartolomé: Snorkelling and Penguins</h2>



<p class="wp-block-paragraph">After lunch, we visited Bartolomé Island, a small but geologically striking islet famous for its towering volcanic spire, known as Pinnacle Rock. We began with a snorkelling session around the base of it.</p>

<p class="wp-block-paragraph">After several days in the water, I started feeling more at ease, whereas before I never felt comfortable in the water, and this made the session much more enjoyable.  We started to swim around the rock.  The underwater scenery was rich with life: bright schools of fish, the occasional shark.</p>

<p class="wp-block-paragraph">As I swam around the rock, I was busy looking around in the water, until I was suddenly startled by a sea lion sleeping near the surface. At first I panicked, but the sea lion paid us no mind.  As it swam away, other snorkelers followed it.</p>

<p class="wp-block-paragraph">Eventually we made it around the rock, and spotted some Galápagos penguins &#8211; another member of the &#8220;Big 15.&#8221; They stayed onshore this time, and we observed them resting on the rocks.  It would have been school to swim in the water with them, but they didn&#8217;t jump in.</p>

<p class="wp-block-paragraph">Later we found out that one snorkeller returned with rashes after being unknowingly stung by jellyfish (apparently from a few days ago, but didn&#8217;t the rashes didn&#8217;t appear immediately).  None of us had realized jellyfish were in the water.</p>



<h2 class="wp-block-heading">Volcanic Landscapes and Iconic Views</h2>



<p class="wp-block-paragraph">Later in the day, we hiked to the summit of Bartolomé to take in its famous view &#8211; the one often featured in postcards of the Galápagos. The trail was constructed with a special local hardwood known for its resistance to salt and corrosion. The path included many stairs, which made some hesitate, but was no problem for me.  Funny thing is that the guide was panting harder than I was.</p>

<p class="wp-block-paragraph">As we walked up, the black lava fields and stark, dry terrain stood in contrast to the more vegetated islands. Bartolomé is relatively barren, and is considered a geologically young island, having emerged from volcanic activity only a few hundred thousand years ago. Unlike older islands that have had time to accumulate soil and vegetation, Bartolomé&#8217;s surface is still largely exposed lava, ash, and tuff. Because it hasn&#8217;t developed significant plant cover or topsoil, its ecosystem remains in an early stage of ecological succession, providing a glimpse into what the earliest phases of island formation look like in the Galápagos.</p>

<p class="wp-block-paragraph">Lava tubes scar the landscape &#8211; formed when the outer crust of a lava flow solidifies while the molten core continues to move. When the lava drains away, it leaves behind hollow tunnels. The ropey textures we saw on the ground were from lava flows, which cool into smooth, undulating surfaces.</p>

<p class="wp-block-paragraph">The summit offers a sweeping view of Pinnacle Rock and the surrounding islets. From this vantage point, we could also see the contrast between the barren lava terrain of Bartolomé and the greener neighbouring islands like Santiago. The turquoise waters outlined the curves of the coastline, and we could spot sea birds gliding in the air currents.</p>

<p class="wp-block-paragraph">After the hike, we took a short boat ride along the shoreline and spotted several more Galápagos penguins perched on the rocks. These curious birds seemed unfazed by our presence, occasionally flapping their wings or hopping between stones. We got to see a closer view compared to snorkeling.</p>



<h2 class="wp-block-heading">Evening Science and Stargazing</h2>



<p class="wp-block-paragraph">Those who had opted out of the climb spent time with the ship&#8217;s naturalists collecting seawater samples. After dinner, they showed us the samples under a microscope. Even in just 3 mL of seawater, we saw fish eggs, miniscule shrimp-like creatures, and other microorganisms.  Then I wondered how many of them I ingested from accidentally drinking the seawater while snorkeling.</p>

<p class="wp-block-paragraph">Later that night, the skies cleared and we joined the guides on the top deck for a stargazing session. Thanks to our equatorial position, we could see both northern and southern constellations. The guide used a powerful laser pointer to trace the outlines of Scorpio, Libra, the Southern Cross, and even Ursa Major. They pointed out bright stars and planets like Antares, Alpha Centauri, and Beta Centauri. The clarity of the sky, with minimal light pollution, made the session feel so much richer than at a planetarium.  This day was so much more than just wildlife.  It combined also geology, and scientific curiosity.</p>

<p class="wp-block-paragraph">I recently had the fortune of being on a Mediterranean cruise aboard the beautiful Celebrity Edge.  A cruise through the sparkling waters of the Mediterranean Sea offers a unique opportunity to easily hop between charming coastal towns and less-visited islands that would otherwise require lengthy travel logistics to reach.  We got to wake up at a new exotic destination each morning.  The journey combined delicious gastronomic discoveries with relaxing pampering onboard the cruise ship. Read on for a look inside some of the medieval towns, UNESCO World Heritage Sites, renowned museums, and postcard-perfect landscapes.</p>



<h2 class="wp-block-heading">Barcelona</h2>



<p class="wp-block-paragraph">Our journey began in the Catalan capital of Barcelona, where we enjoyed some classic seafood paella before boarding our ship.  The rice had absorbed the rich broth, and the heat from the cooking created a nice crust at the bottom of the pan. Tender squid, juicy shrimp, and mussels mingled with the perfectly seasoned rice. The diversity of textures and robust flavors in each mouthful gave us a true taste of the region&#8217;s iconic cuisine. We scraped the final grains of rice from the pan.  Maybe one day I could make a paella as good as this to recreate this experience.</p>

<p class="wp-block-paragraph">With only a little time before our cruise departure, we took a quick stroll down the famous Las Ramblas to soak in the vibrant city atmosphere, even though it was difficult to navigate while carrying our luggage.  This was okay though as we&#8217;ve <a rel="noreferrer noopener" href="https://blog.henrypoon.com/blog/2011/08/15/barcelona/" data-type="link" data-id="https://blog.henrypoon.com/blog/2011/08/15/barcelona/" target="_blank">visited Barcelona before</a>.</p>



<h2 class="wp-block-heading">Valencia</h2>



<p class="wp-block-paragraph">Our first port of call was Valencia, known for its impressive medieval old town. We started in the bustling central market, but found out it was closed on Sundays, and instead only saw people outside selling old junk from their houses.  The only interesting thing there were <em>Spanish</em> Pokemon cards.</p>

<p class="wp-block-paragraph">We then visited the 15th century La Lonja silk exchange, a UNESCO World Heritage site noted for its Gothic architecture. Though no longer a center of commerce, this historic building transports visitors back to Valencia&#8217;s golden era.  This grandiose building with its colonnaded central hall and twisting columns was the center of Valencia&#8217;s thriving silk trade for centuries.</p>

<p class="wp-block-paragraph">As we arrived at the Valencia Cathedral, we were treated to an unexpected scene. Groups of children and adults dressed in elaborate traditional costumes were flocking to the cathedral. We thought this parade might have been part of the annual Las Fallas festival, but it wasn&#8217;t that time of the year.</p>

<p class="wp-block-paragraph">On the edge of the old town, we visited the Torres de Serranos, a part of the city&#8217;s medieval fortifications from the 14th century.  The towers rise nearly 20 meters high on either side of the gates. They were originally linked by a bridge over the road, from which arrows and boiling oil could be rained down on would-be invaders. Despite some damage over the centuries, the twin towers have survived as an imposing relic of Valencia&#8217;s medieval defenses.</p>

<p class="wp-block-paragraph">One of the more whimsical sights we a cat door built into the wall of a building, and it allows the city&#8217;s stray cats to come and go as they please.  Another sight was visiting the outside of the bullfighting arena.  Even though there was no bullfighting event happening at the time, it still allowed us to see this iconic part of Spanish culture.</p>

<p class="wp-block-paragraph">We were only able to scratch the surface, and next time we go back, we&#8217;ll go to stuff we wanted to go to but didn&#8217;t have time for like the City of Arts and Sciences complex.</p>



<h2 class="wp-block-heading">Ibiza</h2>



<p class="wp-block-paragraph">Another stop along the cruise was in sunny Ibiza, which offers a vibrant mix of beachside relaxation and exploration of historic sights. During our recent visit, we discovered some of the island&#8217;s cultural gems, the island&#8217;s famous walled old town of Dalt Vila, a UNESCO World Heritage Site.  From the window of our room on the cruise ship, we could see the Dalt Vila.</p>

<p class="wp-block-paragraph">Strolling through Dalt Vila, the diverse architectural influences are striking, from the grand Catalan-Gothic Catedral de Santa Maria d’Eivissa to the humble whitewashed houses draped with vibrant flowers. We also spotted the 16th century Castell d’Eivissa perched atop the highest point.  We could even spot our cruise ship docked at the port far below.</p>

<p class="wp-block-paragraph">After taking in the impressive cathedral, we continued to stroll Dalt Vila&#8217;s labyrinth of narrow cobblestone streets. Flower-filled balconies and whitewashed houses flanked our path. The charming architecture and relaxed pace made it easy to imagine life centuries ago within these walls.  Before heading back down the hill, we stopped at a cafe tucked within the city walls. There we sipped mojitos (albeitly overpriced), the perfect refreshing drink after ourwalk, and soaked in the ambience around us.</p>

<p class="wp-block-paragraph">Our day in Dalt Vila provided a beautiful glimpse into Ibiza&#8217;s history and culture. Getting lost in its winding alleys while surrounded by medieval architecture was an unforgettable experience. We can&#8217;t wait to return to further explore this magnificent walled city.</p>

<p class="wp-block-paragraph">We drove out to Cape Canaveral to visit the Kennedy Space Center, the primary launch site for human spaceflight missions in the United States.  It&#8217;s one of the major attractions that doesn&#8217;t center around amusement parks.  Visitors are welcomed by the Rocket Garden that showcases a diverse range of rockets used for past achievements that serve at a tribute to the achievements of space exploration.</p>

<p class="wp-block-paragraph">One of the key attractions there is a the tour that takes visitors around the space center, and one of the key attractions along the tour is the Vehicle Assembly Building, a colossal structure where NASA assembles and prepares its largest rockets for space missions, including the Apollo and Space Shuttle programs. It stands as an iconic symbol of human space exploration and engineering prowess and is one of the largest buildings in the world.  It played a pivotal role in assembling rockets and preparing space shuttles for their missions.</p>

<p class="wp-block-paragraph">Another cool attraction was the mission control room.  It&#8217;s no longer in use, and has since been repurposed as a simulation of a rocket launch.  As the launch clock continues counting down, different systems of the rocket come online and their statuses are reflected on the screens and dashboards around the room.  Until finally, when the countdown goes to zero, rocket launch noises fill the room and the screens show the rocket launching.  The windows behind also glow bright orange to show the burn of the thrust.</p>

<p class="wp-block-paragraph">The tour concludes with an exhibit of the Saturn V rocket, the largest and most powerful rocket ever built &#8211; the one that carried astronauts to the moon.  It was difficult to grasp the scale of the rocket until I saw it in person.  Each section is separated, showing each of the stages of the rocket launch.  The Saturn V rocket launches by igniting its powerful engines, generating millions of pounds of thrust, and lifting off from the launch pad. As each section of the rocket runs of fuel, it separates from the rest, and propels the spacecraft and astronauts into space (most of the fuel is spend leaving Earth&#8217;s gravity).  Attached to the end are the modules for the lunar lander and the craft for returning back to Earth.</p>

<p class="wp-block-paragraph">It was also cool to see the lunar lander up close.  It was a spacecraft designed to land astronauts on the moon during NASA&#8217;s Apollo missions. It consisted of two parts: the descent stage, which landed on the moon&#8217;s surface, and the ascent stage, which launched the astronauts back into lunar orbit.</p>

<p class="wp-block-paragraph">In 1981, the space shuttle program was launched with the aim of creating a reusable spacecraft capable of launching payloads into space, deploying satellites, conducting scientific research, and safely returning to Earth.  The exhibit also featured a simulator that simulates the experience of a rocket launch aboard a space shuttle &#8211; essentially a motion simulator that mimicked the G-forces and movements of a shuttle launch.  Supposedly it&#8217;s a high fidelity simulation of a rocket launch, but surprisingly the G-forces only went up to what I vaguely recall to be 3.5Gs and felt actually quite mild (even children went on the ride and were completely okay).<br><br>A visit to the Kennedy Space Center adds a unique and educational dimension to the Orlando experience. From the awe-inspiring Rocket Garden to the monumental Vehicle Assembly Building, the center embodies the triumphs of human space exploration. It was cool to experience the simulated rocket and shuttle launch and getting up close to the lunar lander and Saturn V rocket.</p>

The 20,000 plus hand-painted tiles depict scenes from Portuguese history and everyday life.  It&#8217;s still a fully functioning train station.  As someone not really educated in the history of Portugal, I couldn&#8217;t really follow the story.</p>

<h2 class="wp-block-heading">McDonald&#8217;s Imperial</h2>



<p class="wp-block-paragraph">The McDonald&#8217;s Imperial is still a McDonald&#8217;s but its uniqueness comes from the beautiful Art Deco building it&#8217;s housed in, which was originally built a coffeeshop.</p>

<p class="wp-block-paragraph">Though for the 5€ it costs, there&#8217;s not much to see except for the main atrium and the upper floor.  However, the ticket price can be redeemed against any purchase.</p>



<h2 class="wp-block-heading">Mercado do Bolhão (Bolhão Market)</h2>



<p class="wp-block-paragraph">Bolhão Market allows visitors the opportunity to see and purchase a wide variety of fresh and seasonal produce, including locally grown fruit and vegetables, fish caught locally, and various cuts of meat. In addition, there are also artisanal products, such as cheese, bread, and wine.</p>

<p class="wp-block-paragraph">It&#8217;s really clean compared to other food markets (like the ones in Asia) despite them also handling produce and raw meat.  We ended up buying some cans of sardines here too just to give them a try.  We also got a complimentary sardine pate too.  Though like I mentioned in the <a rel="noreferrer noopener" href="https://blog.henrypoon.com/blog/2023/02/12/lisbon/" target="_blank">other post</a>, I later found out that the sardines here weren&#8217;t as good as I expected.</p>



<h2 class="wp-block-heading">Fado Music</h2>



<p class="wp-block-paragraph">Fado is a traditional form of Portuguese music that is characterized by its melancholic tone. The word &#8220;fado&#8221; comes from the Latin word &#8220;fatum,&#8221; which means fate, and the music is often associated with feelings of longing, saudade (a Portuguese word for a deep sense of yearning), and a sense of resigned acceptance of life&#8217;s ups and downs.</p>

<p class="wp-block-paragraph">Fado music is typically performed by a solo singer accompanied by a Portuguese guitar and a classical guitar. The singer sings songs that often tell stories of love, loss, and the struggles of everyday life. Fado music is usually performed in small venues, such as restaurants and cafes, and the intimate setting adds to the emotional impact of the music.  I can&#8217;t say I enjoyed a lot, but I could definitely feel the emotion in the singing and it&#8217;s pretty consistent with the style.</p>



<h2 class="wp-block-heading">Port Wine Tasting at the Vila Nova de Gaia</h2>



<p class="wp-block-paragraph">Across the Dom Luís I Bridge that spans the Douro River is the neighbouring district of the Vila Nova de Gaia, which hosts a number of port wine houses.</p>

<p class="wp-block-paragraph">Kopke is one of the oldest Port wine houses in Portugal, and located in the district of Vila Nova de Gaia, across the Douro River from Porto. The Kopke family has been producing wine for over 400 years, and the winery is known for its exceptional vintage Ports and aged tawny Ports.</p>

<p class="wp-block-paragraph">We got to take a tour of the Graham&#8217;s Winery.  The guide explained to us the difference between tawny, ruby, white, and vintage Ports. Tawny Ports are aged in oak barrels and have a smooth, nutty flavor, while ruby Ports are younger and have a fruity, sweet taste. White Ports are less common but offer a refreshing, citrusy flavor. Vintage Ports are made from the best grapes from a single year and are aged for a long time, resulting in a rich, complex flavor.</p>

<p class="wp-block-paragraph">As a part of the tour, we purchased three different tastings of port, a combination of tawny, vintage and ruby ports.  My preference is definitely the aged tawnys, though I found it tough to distinguish between a 20 year, 30 year and a 40 year tawny &#8211; so I guess that means spending more on the extra years of age isn&#8217;t worth it for me.  But at least I could tell between the tawny and the other ones and now I know what I like.</p>



<h2 class="wp-block-heading">Bota &amp; Bira</h2>



<p class="wp-block-paragraph">This definitely one of the best meals we had in Portugal.  We ordered a 1.2 kg aged T-bone steak to share.  Combined with the aging process and the seasonings they added, the meat had a rich, beefy, earthy flavour.</p>

<p class="wp-block-paragraph">We felt bad that we made our friend drive the whole way from Lisbon to Porto while we just slept so we treated him to this meal.</p>



<h2 class="wp-block-heading">Porto compared to Lisbon</h2>



<p class="wp-block-paragraph">Compared to Lisbon, Porto was a lot hillier.  The whole city is built on hills, which made it challenging when recovering from being sick.  Though the city itself was much more well maintained than Lisbon</p>



<p class="wp-block-paragraph">It was a lot less grungier too, but there were still people in the street hustling their fake purses or selling marijuana (though to a lesser extent).</p>



<p class="wp-block-paragraph">At <a href="https://www.cantina32.com" target="_blank" rel="noreferrer noopener">one restaurant in particular</a>, when the host led us to the table, mentioned that we were lucky to get a table as there was a reservation no-show, even though while we ate, there were several tables that never got filled.  It just made them look dishonest.</p>



<p class="wp-block-paragraph">Though on the whole, we definitely enjoyed Porto a lot more than Lisbon.  The food was better, the sights were more interesting, and we felt safer.</p>
