Arrival In Quito

Our journey began with a familiar hiccup – another delayed flight. A storm within our flight path forced our plane to fly around it, delaying us an hour. Fortunately, we made the connection and arrived in Quito by afternoon. And another hiccup, our cruise package included an airport transfer, but no one from the cruise company showed up. After learning that Uber was technically not legal in Ecuador but still commonly used, we summoned a ride. Our driver wasn’t concerned, and the ride went off without issue, and we arrived at the hotel.

Brazilian Steakhouse

Dinner that night was at the hotel’s Brazilian steakhouse, Fogo de Chão. It operated on a simple system: green side up on your card meant “more meat, please”, and red meant “stop”. Servers rotated through the tables offering cuts like filet mignon, sirloin, pork ribs, and leg of lamb. Though the selection was impressive, the sheer volume of meat was overwhelming. We left the table stuffed to the brim and almost regretted that extra slice of steak. Afterward, we walked it off by exploring the hotel. Near the pool, hotel staff gave us food for the koi pond. The koi swam up in anticipation, mouths already open, having clearly learned the drill.

Touring Quito’s Historic Centre

The next morning, after a buffet breakfast featuring fresh passion fruit, guava, and plantains – fruits native to Ecuador – we joined our tour group for a full-day city excursion. Our first stop was Plaza San Francisco, located in Quito’s historic centre. On the top of a nearby hill, we noticed a statue with wings – known as the Virgin of Quito, is unique to the region and symbolizes the Immaculate Conception through Andean artistic traditions.

The adjacent church and convent, officially known as the Iglesia y Convento de San Francisco, is among the oldest religious sites in South America, constructed in the 16th century atop an Inca temple. Much of the interior and cloisters were constructed using locally sourced volcanic stone and alabaster. Its central courtyard was tranquil, framed by arches and dotted with trees bearing what looked like lemons and olives – some people even picked and tasted them right off the branches.

The city sits at an altitude of roughly 2,850 metres (9,350 feet) in the Andes, and the effects of high elevation quickly became apparent. Climbing stairs at the convent’s bell tower left me short of breath, apparently a common experience for visitors not yet acclimatized.

Indemini Báez Chocolate

Unlike bulk cacao used in mass-market chocolate, fine-flavour cacao is prized for its complex taste notes—often described as floral, fruity, or nutty—and is grown under specific conditions with greater attention to fermentation and drying. Ecuador is known especially for its Arriba Nacional variety, which has earned a reputation among artisanal and high-end chocolate producers worldwide.

Plaza Grande

Plaza Grande, also known as Independence Square, is surrounded by some of the most important civic buildings in the country, including the Carondelet Palace, which serves as the presidential residence and the seat of government. We also learned about the Ecuadorian political system and the country’s recent presidential transition. Our guide mentioned that voting is mandatory in Ecuador, a measure intended to increase civic engagement.

The guide also mentioned that if we hadn’t already noticed, Ecuador’s official currency is the US Dollar. They adopted it as its official currency in 2000 after a severe economic crisis. We’d brought some U.S. dollars, assuming they’d come in handy for currency exchange, without knowing the official currency prior.

Church of Gold

We also visited La Compañía de Jesús, a Jesuit church famed for its Baroque architecture and lavish gold-covered interior. Built in the 1600s, the church’s ornate design reflects both Spanish influence and local craftsmanship. The interior is said to be covered with more than 50 kilograms of gold leaf, adorning everything from the altars to the intricate ceiling mouldings.

The sheer amount of gold gives the sanctuary a warm, glowing appearance, especially when lit by candlelight. Despite the obvious value, theft isn’t a concern – access is tightly controlled, security is present during opening hours, and the gold is bonded to surfaces in a way that makes removal extremely difficult without causing noticeable damage.

Crater of Life

For lunch, we dined at a restaurant overlooking the Pululahua crater – the lunch was simple, but the view was the real draw. The owner also kept a few llamas on the property – one of them even spat out its grass at me.

Unlike most volcanic craters, this one is inhabited. Pululahua’s fertile soil and sheltered microclimate allow a small community to farm and live within the crater’s walls, shrouded much of the time by drifting clouds.

The City at the Centre of the World

The final stop was Ciudad Mitad del Mundo. This monument was built in the 18th century based on French geodesic measurements to mark the equatorial line. However, later GPS data revealed the true equator lay about 240 metres north.

Still, the site remains symbolic of Ecuador’s connection to the equator – “Ecuador” literally means “equator” in Spanish. When the country gained independence in the 19th century, it chose the name Ecuador to reflect its location on the equatorial line.

That evening, we returned to the hotel for a final dinner in Quito before we left for the Galápagos. The meal was delicious, but it didn’t quite compare to the indulgent buffet from our first night. This brief stop in Quito, nestled high in the Andes and steeped in colonial and Indigenous history, offered a nice intro to Ecuador.

We landed late in the day in Auckland, and at that time many restaurants were already closed. We managed to get to Beast & Butterflies fifteen minutes before the kitchen closed. We indulged in two standout dishes: the first was a lamb rump from Hawke’s Bay, a region in the North Island famous for its quality meats, and the second was a whole yellow belly flounder, a fish native to New Zealand waters. The lamb was cooked to perfection and was accompanied by sweet mini peppers, and briny olives. The flounder had a satisfying char on the exterior and was dressed with confit lemon, adding a subtle citrus note, and scattered with capers and parsley for bursts of salt and freshness.

After our countryside adventures, we returned to Auckland for the final leg of our trip. By the time we arrived, dusk had already settled over the city. A thick blanket of fog obscured much of the harbour. The true culinary gem of our Auckland experience was Ahi, a restaurant that takes pride in sourcing ingredients from across New Zealand. The menu even lists the local origin of the main component for each dish.

Each dish showcased a different region of the country. We began with a unique appetizer from the Hunter Hills in the South Island: wallaby tartare served on a chip made from puffed wagyu beef tendon. Tartare, being a preparation of finely chopped raw meat, offers a pure, unadulterated taste of the protein. In this case, the wallaby tartare presented a lean, mild gamey flavour profile with a subtle sweetness. As for the crispy chip underneath, while it was good, I wouldn’t have known it was a wagyu beef tendon without being told.

Next, we savoured a Te Matuku oyster from Waiheke Island, located in the Hauraki Gulf near Auckland. The oyster was accompanied by apple marigold and a morning cider sauce, which added a subtle sweetness and acidity that complemented the briny freshness of the oyster.

From Akaroa Harbour on the Banks Peninsula, we enjoyed vodka-cured Akaroa salmon. The dish featured a bloody mary dressing, confit green tomatoes (essentially tomatoes slowcooked into a paste), and dill crème fraîche. The rich, silky texture of the salmon was perfectly offset by the tangy dressing.

Our main course featured Provenance lamb rump (a cut from the back of the lamb near the loin) from Ranfurly in Central Otago. The lamb was served with brussels sprouts, sheep’s labneh (a Middle Eastern-style yogurt cheese), kyoho grapes, and smoked kohlrabi (a type of German cabbage). The lamb rump itself had a crisp layer on the outside with a tender inside.

We also tried the butterfish, a species found in the coastal waters around New Zealand. It was served with celeriac pappardelle, scampi velouté (French-style sauce), mushrooms from Ora’s Farm, and a sunflower seed gremolata (an herb sauce). The delicate flavour of the butterfish was elevated by the earthy mushrooms and the rich, creamy velouté.

To conclude our meal, we indulged in a Kapiti honey cake, accompanied by rhubarb and cardamom sorbet and orange mascarpone. The dessert was a perfect balance of sweet and tart flavours, with the aromatic cardamom adding depth to the refreshing sorbet.

Throughout our meal, the waiter was exceptionally knowledgeable, providing us with fascinating details about each dish and its origin. This added an educational element to our dining experience. While our time in Auckland was brief, these culinary experiences left us with a newfound appreciation for New Zealand’s food scene.

At the time we went, Iceland was one of the few countries in the world that allowed vaccinated foreign visitors. All that was needed was proof of vaccination – not even a pre-entry COVID test. The fact that most people were vaccinated meant that most people were not wearing masks in the city, but this was before even the Delta variant – it seems like so long ago now.

I had been itching to go travel somewhere since the pandemic began, and this was a very welcome nudge towards normalcy. Flying with Icelandair was the same as before: the seat and leg room is pretty comfortable, but there’s no food included with the airfare. The only difference is the extra bureacracy related to COVID, which increased how long it took each person to get through immigration, resulting in long lines after the plane. It didn’t help that we arrived so early in the morning that the food places weren’t even open yet and we had to wait in line while hungry. Eventually, we picked up the rental car and drove into Reykjavik for breakfast. We took the day easy by just exploring Reykjavik on foot, and took a nap in the afternoon when the jet lag caught up to us.

That night, we had probably the most memorable meal we’ve ever had at Tapas Barinn. The great thing about tapas is that as tourists, we get to try a little bit of everything as opposed to ordering entrées.

I even got to try some Flóki single malt whiskey. The smokiness from the whiskey actually comes from the barley smoked using sheep dung, a traditional cooking method. I also got to try some more brennivin like my last trip to Iceland – it’s essentially a grain alcohol (40%) and flavoured with caraway seeds, which gives it a sweeter flavour than something like vodka.

I had visited Iceland a couple years ago, but it was in the winter where there was only 4 hours of light per day, and even then the sky looked like dusk.

This time, travelling there in the summer, I didn’t see the night sky the entire time I was there. I could more clearly see and appreciate the nature around me, like the endless fields of moss growing on the rocks, and sheep freely roaming the fields.

It is thought that the Icelandic sheep were introduced to Iceland by the Viking settlers. Farmers allow them to freely roam around in the summer months, and as winter comes, they round them all back up again.

Like my previous trip to Iceland, we travelled along the Ring Road to see the waterfalls, and the volcanic beaches.

This is what the view at Seljalandsfoss looks like in the summer versus the view I saw in the winter. I had no idea Iceland could be so green. In the summer, people can even walk behind the waterfall, between the rock and the falls itself, but in the winter, the trail is closed because of ice.

Skógafoss looks about the same between summer and winter, except the vegetation is greener in summer.

A kitty even came out to hang out with us! As we were walking, the cat just walked up to us and stopped, expecting pets as a payment to pass through. After that, off it went.

Unlike travelling to Iceland in the winter, there were no restrictions (4WD) to drive up to Dyrhólaey in the summer. As we drove up, I could see why. The road was a set of steep switchbacks on gravel roads that were only a little more than two cars width – and there were no guardrails.

From the top, one can see the endless mountains, or watch the waves crash against the beaches of volanic sand.

The next day, we took a Superjeep tour to see ice caves on an active volcano known as Katla. The reason why it’s called Superjeep is because it can deflate its tires (for icy roads), and inflate them back up again depending on the terrain, but otherwise it looks like your typical Ford Excursion but with big tires.

The ice caves were located a ways in from the glacier. In summer, a lot of the ice had melted, revealing the volanic sand and rock underneath.

Only just now as I was writing this, did I realize we were travelling on a literal volcano, but I suppose it’s safe.

As we headed up the volcano, the lush, green vegetation quickly disappeared, revealing a rocky landscape with a mix of ice and black volcanic rock. Grey clouds covered the sky and it began to rain.

Eventually, the tour guide parked the truck, and we began our volcano hike. He brought his ice pick with him and used it several times to cut steps in the ice.

Despite the summer season, the temperature still felt like a mild winter. But it still meant the ice caves would not be as fully developed as in the winter season, and this could clearly be seen when comparing the ice caves from this trip versus the previous one. In fact, the winter ice cave was really more of a tunnel, while the picture of the summer ice cave was taken from the end of the cave with the camera pointing out.

The ice on top of the volcanic rock looked so alien that several movies used this place as a location for another planet. Rogue One was filmed in the area for the opening scene where young Jyn Erso hides from the stormtroopers. The movie doesn’t show the whole cave, but the similiarity is clear. If the movie had shown the whole cave, one would see why people call it the “Yoda Cave”.

It was nice staying in the cave for a bit as a brief respite from the rain. We made the mistake of wearing jeans for a multi-hour hike in the rain, and our wet clothes just made us even colder. We also got the chance to chat a bit with others on the tour. We met an orthodonist who practised in Greece by the name of Thanos (I wonder if he was aware of the MCU), and another who claimed to be a “voodoo priestess”, whatever that means.

The next morning, the plan was whale and puffin watching. It turned out to be an incredibly bad idea because I apparently get seasick, and didn’t get to see a lot. Even those who did see whales could really only see a small fin barely capturable on camera. Only a small percentage of people get to see the whale flying out of the water and crashing back down. Good thing the puffin watching was on a separate tour so I got to recover from the seasickness, but we decided not to go and instead gave the tickets away to another group that we overheard looking for tickets to the same tour.

Instead, we went to go get some Icelandic hotdogs for lunch. The key things that set it apart are the condiments, and the sausage. In addition to ketchup, and sweet mustard, they also add “remoulade”, similar to mayo with added herbs. The sausage uses lamb, as opposed to chicken/pork/beef.

Next, we headed to the Reykjanes Peninsula and the Blue Lagoon. We reached the tip of the peninsula and stood on the cliff watching the waves crash against the shore. If there was such a thing as the end of the earth, this was it. Despite strong gusts of wind, thousands of birds nested on the side of the cliff. From far away they look like white specks, but one can see them clearly with a good set of binoculars.

Next, we went for a relaxing soak at the Blue Lagoon, a man-made spa fed by water used by a nearby geothermal plant.

The water forms a milky blue colour from the high silica mud, and is supposedly good for the skin. They even sell super overpriced skincare products at the gift shop.

The area is beautiful with all the steam slowly rising from the hot springs with the light cool breeze. It would have felt like a whipping biting wind if not for the hot spring. You just submerge yourself until you feel not too hot and not too cold, and then relax with their cleansing silica face masks and a drink.

After leaving Blue Lagoon, we’d learned there was an active eruption happening at the nearby Fagradalsfjall volcano, and was happening slow enough such that it was OK to go see it.

A short walk from the parking lot led us to the lava flow. The trail continued upstream of the lava flow to the mouth of the volcano.

There were warnings for people to not walk too close to the lava flow because of risks of toxic fumes, but many did it anyway (as did we). Many curious hikers threw rocks on it just to find out that the lava flow had already hardened, even though there were still visible fumes coming out.

The hike turned out to be really long, and we weren’t really prepared to do a multi-hour hike at 20:00 in the cold, wind, and rain. As we reluctantly turned around, we saw people pointing the other and when we looked, we managed to catch a glimpse of the volcano spewing lava from afar. It makes sense now why people call it the “land of ice and fire”

It was surprising to see how watery the lava looked. I expected molten rock to be more viscous. The lava just spewed out in a splash. I felt super lucky to have seen such a sight.

As we walked back, I noticed these hexagonal patterns in the ground. Maybe this is how basalt columns form? From what I’ve read, under certain conditions, the cooling magma can cool in a way that forms these hexagonal shapes.

By the time we reached the parking lot, we were wet and cold (seemed to be a recurring theme by this point). Luckily there was a food truck at the parking lot selling hot soup.

The next morning before heading out to the Golden Circle, we started the day off with a nice brunch at Sandholt.

The unexpected star of the breakfast was the bread. As an amateur baker myself, this is the bread I aspire to make – it’s soft, light and airy with a crisp crust.

Next step along the Golden Circle was Geysir. The geothermal heat creates pressure underground causing the water to explode upward every few minutes. The entire area is filled with geothermal pools, some of which are so hot they’re bubbling from the heat and pressure.

It’s cool just to just stand in anticipation of the eruption. From looking at it, there’s no indication that it’s going to explode at all, and then it just does. At one point, the wind carried the water toward us and got us all wet, but luckily by the time the water hits the ground, it’s cooled down.

From the Geysir, we drove to Gullfoss. Unlike other waterfalls, this one has a unique feature where the water does a zig zag before hitting the bottom.

There were attempts in the past to build a hydroelectric plant here, but those efforts have not succeeded, and since then, the waterfall is now under government protection.

The last destination of the Golden Circle was Kerið crater. It’s believed that the crater formed through volcanic activity. Once the magma chamber emptied, it collapsed, forming the crater. The accumulation of water is not formed by rainfall, but is actually ground water.

On our last day before we left, we got the chance to try more Icelandic dishes. This time we had some lamb soup, dried fish, fermented shark, and some Einstök white ale, a local craft brew.

It’s not often that I would rave about soup, but I liked it so much I’ve been trying to recreate the flavour at home. It’s savoury soup with vegetables, lamb, and herbs/spices. I can’t say I was a huge fan of the dried fish and fermented shark though. The dried fish is served with butter and its flavour reminds me of super tough beef jerky with a light fish flavour, while the fermented shark has a texture of a ham with a soury tang. Perhaps it’s an acquired taste. The beer was great though.

That’s pretty much it for Iceland. We got the chance to try all sorts of local delicacies, and see a piece of nature we wouldn’t normally see in our part of the world. At the airport duty free, I even got to pick up some Brennivin, and a bottle of the Flóki sheep dung whiskey!

You will need:

• WSL2 setup with Firefox installed (mine uses Ubuntu 20.04)
• VcXsrv
• geckodriver

How it works

VcXsrv starts up an X server on the Windows host machine, and what WSL will do is connect to this server to pass on the details of what programs need to be displayed (in this case, the browser window). Geckodriver is there purely as a middle layer for Selenium to be able to interact with Firefox.

VcXsrv setup

This setups the X server so that Windows can display graphical data coming from the Ubuntu instance.

1. Download and install
2. Start it up with the the command line parameter “-ac”. This flag removes access control restrictions for connecting clients (which is okay as long as this server isn’t exposed on the open Internet and that the only client connecting is the Ubuntu instance)
3. Allow connections to VcXsrv on Windows Firewall

The “-ac” flag and allowing the program through Windows Firewall is pretty important. When I didn’t do this, Ubuntu would give me cryptic error messages like “Broadway display type not supported”, but once I set up these access controls, everything was fine.

Bash setup

Install firefox

sudo apt install firefox

Export DISPLAY variable in .bashrc (or for whatever terminal you use, maybe .zshrc, etc.)

This will configure your DISPLAY variable to use the IP address listed in the resolv.conf file. The IP address listed there is the IP address of the X server that will be used for displaying the browser window.

Start up VcXsrv as described in the above and then try to open Firefox. The Firefox window should open.

Geckodriver setup

This acts purely as the API interface that allows Selenium to interact with Firefox. Selenium looks for this executable when controlling the web browser.

1. Download geckodriver (make sure to get the Linux one and not the Windows one)
2. Put it in /usr/bin (or alternatively some other folder in your PATH)

I tend to use Python when running Selenium code, and I haven’t tried it on another language (I imagine the principles are similar). Here is a piece of sample code for starting up the browser and opening up a website, but really any Selenium code can be used.

Our tour took us through the desert in a pickup truck. All we had to do was sit in the back and admire the views. At first it was a little bit disorienting because I literally have never sat in the back of a pickup truck before. I’d seen it many times in movies and what not, but that was it – especially from news clips where insurgents in Iraq or Afghanistan would do it, so it was pretty hard to not compare my experience with that.

Along the way, we stopped by some old carvings on the rocks (so called petroglypths) from the Thamud, an ancient civilization that existed around 8th century BCE.

We hiked around the desert a little bit.

Then we stayed in the desert for the sunset. I normally don’t pay attention to the sunset, but it was pretty amazing to see how fast the sun actually set.

Once the sun touched the horizon, 30 seconds later, it was gone.

For dinner, the staff at the camp prepared a feast for us – zarb, they called it. It’s similar to the chicken/lamb on rice meals we had in the previous days, but this one was cooked underground inside a barrel. This was the best meal in Jordan by far!

That night, we stayed in a camp in the desert. The best part about it was being able to see stars without all the light pollution in the city, and hanging out with the rest of the tour group around a campfire.

The worst part of it was the actual camping. There was some running water, but no hot water. To make it worse, we had to leave the next morning at 04:00 because we had a couple hours drive back through the Israeli border in time before it closed (what kind of border crossing closes during the day?).

The desert was our last destination in Jordan, before we went back into Israel/Palestine (not to take sides here…), to visit the Dead Sea and Tel Aviv.

I always thought that Petra was just a single structure – the same one that gets shown everywhere, but that structure is just The Treasury that’s a part of an entire city built in the rocks.

From the entrance, we walked 30 minutes through a winding gorge formed by a fault line that tectonic forces split apart until we reached The Treasury. Stray dogs followed us every step of the way hoping for scraps of food. Leaving at 6:00 didn’t help because the only people that the dogs could beg from was us.

We arrived so early we were practically the only people there. We admired Petra on our own without the large crowds of tourists everywhere. We took our time walking up to it, all around it, up the slope to get a better view (nobody is allowed inside it though). We did all of this before the crowds showed up.

Petra was the capital of a kingdom of the Nabataean, a group of nomadic Arabs who established the city as a major trading hub. The Nabataeans constructed massive structures by carving it all out of the sandstone. Although it’s called The Treasury, the building is believed to have been the mausoleum of the Nabataean King Aretas IV.

The area around Petra is also home to the Bedouin people, a group of nomadic Arab people who inhabit the desert regions in northern Africa and the Arabian Peninsula. In the modern times, many have abandoned their nomadic lifestyle and many Bedouin around Petra work as tour guides, offer camel rides, among other things. One of the Bedouin people there is actually the descendent of a woman from New Zealand who married a Bedouin man and wrote about it, called Married to a Bedouin.

The area is over 250 square kilometers, something I totally didn’t expect (because I totally did not do my research before I went). I’m not too big on hiking and I was totally not prepared for a hike that day – I would have totally brought more water, and more food along with me that day. Despite that, I hiked up the 900 or so steps to the monastery anyway, while getting hassled by vendors trying to sell me their junk. Temperature-wise, the temperature shot up to a whopping 20 degrees Celsius from the 0 degrees Celsius just two days before. My body did not like that.

We spent about 8 hours in Petra, walking along the rock faces, seeing the ancient ruins, hiking up the hill, but if I had more energy I totally would have hiked up the other trials for even better views of the area.

For dinner we had mansaf, probably the national dish of Jordan. It’s a delicious dish made with lamb and rice dish mixed with a yogurt sauce! This tasted even better than the chicken rice dish we had the day before. I had no idea that lamb and yogurt was such a great combination. It was a great meal to refuel after such a long day.

Bastogne

The Battle of the Bulge (known in German as the Unternehmen Wacht am Rhein – Operation Watch on the Rhine) was the last major German offensive in the western front during World War II. The Germans attempted to use this offensive to break the Allied offensive on that front and force the western allies to negotiate a peace treaty. The territory taken by the Germans during the offensive resembled a “bulge” on the map, hence its name.

During the battle, Bastogne was surrounded by German forces, and when the Germans asked the Americans in Bastogne to surrender, Brigadier General McAuliffe famously answered “nuts!” to the German request.

We stayed overnight in the same farmhouse which served as the former field headquarters of the legendary American 101st Airborne Division during the battle. The staff there mentioned that the same family still owns the farmhouse to this day and that some of them had perished in concentration camps during the course of the war.

They even decorated in the interior with old helmets and ammo boxes.

I wouldn’t consider the place in the middle of nowhere, but maybe trying to find it at night isn’t the best idea.

Just look for the tank turret out front I guess!

We tried going to the Bastogne Museum, but little did we know that the Bastogne War Museum was closed between 20. January 2020 to 19. February 2020. I knew it was low season, but I didn’t think it was so not busy that the entire museum would be closed for a whole month! The only exhibit we got to see was the East Germany open air exhibit outside showing off art painted on the tank, slabs of the Berlin Wall on old Trabants.

Nearby the museum was the Mardasson Memorial, a monument dedicated to the American soldiers who fought the Battle of the Bulge. Inside the memorial, carved panels tell the story of the battle.

The weather really cooperated with us today! We had clear blue skies all day, and got to see the the thin layers of morning frost over the vast farm fields.

Liège

The weather didn’t cooperate for long though because it became like this on our way to Liège…

The thing that surprised me about Liège was how seedy it was. We were hanging out around Place St Lambert, and it felt like people were subtlely eyeing us from the side of the street. In once instance, the moment we turned corner, a man glanced at us and immediately started walking in our direction. I glanced at him some more and eventually he went away. Yeah, we didn’t stay long in Liège.

I think one way to explain why it was so seedy was that Wallonia was no longer Belgium’s center of industry like it was in the late 19th and early 20th century. As the industry went to neighbouring Flanders, the local economy suffered.

Drielandenpunt

Next up, Drielandenpunt, the triple point between Germany, Netherlands, and Belgium. It’s also simultaneously the highest point in the entire Netherlands, a miniscule 322.5m above sea level.

Aachen

Not far away from the Drielandenpunt, was the westernmost city in Germany, Aachen. This is where 31 Holy Roman Emperors were crowned. Charlemagne (his bust pictured below) himself had his imperial medieval residence here.

The Aachen Cathedral shown below was the burial location of Charlemagne. The chapel shown in the middle is the location of the coronation of the Holy Roman Emperors. Despite the name, the Holy Romans Empire was neither holy nor Roman, nor an empire.

As a “holy” empire they weren’t exactly unified by religion. It wasn’t solely catholic and had a significant population of Protestants.

It wasn’t really Roman since for most of its history it didn’t rule over what the Roman Empire ruled over (although it did for a time) and its centre of power was ultimately in Germany. Arguably, the Byzantines or the Eastern Roman Empire was the true successor to the Roman Empire. They were a part of the Roman Empire when it fell and it continued the empire in the east until it fell in the 15th century to the Ottoman Turks.

Technically, it was an empire (at least officially) for a time, until their defeat in the Thirty Years War (1618 – 1648), which resulted in the kingdoms within the empire effectively receiving independence from the empire.

For lunch, I finally got the chance to eat Eisbein (bottom dish), a pork knuckle! It’s simmered for several hours in broth and served with sauerkraut and mashed potatoes! If you like meat, this is the dish for you. The above dish is a schnitzel – thin slice of meat (thinned via pounding) that’s breaded and fried.

Bonn

From Aachen, we drove to Bonn to meet up with a friend, who moved to Bonn from Taiwan to pursue a PhD in chemical engineering. We were so full from lunch, we only had a small snack for dinner at a local pub.

Since it was a Bavarian pub, it sold Bavarian specialities like weisswurst (shown on bottom – literally white sausage). It’s a sausage made from veal! The bread in the basket is a very delicious German pretzel. It’s got a nice cripsy outside flavoured with salt with a soft inside.

After dinner, we explored the city a little bit and visited the birthplace of Ludwig van Beethoven. The house is one of the few remaining middle-class homes of the era.

Bonn is also the world headquarters of an amazing brand of gummy bears – Haribo! It was founded by Hans Riegel in Bonn, hence the name Haribo. People who hear about Haribo for the first time usually think it comes from Japan, and are almost always surprised to find out it’s German! The outlet store not far from Bonn city centre has a MASSIVE selection of all sorts of Haribo variants! It’s got gummy bears, sour worms, licorice, and more! I definitely recommend the gummy bears (of course), the frogs, coca colas, and the Phantasia pack!

That concludes our 7th day. The next day we’d travel to more German cities – Cologne and Düsseldorf.

The image above is the Lotus Temple – the Bahá’í House of Worship. Within the lotus flower, structure has almost no rooms – it’s mainly a giant atrium filled with pews. It’s unique construction has won it many architectural awards and is one of the most visited buildings in the world.

The India Gate is like the Indian version of the Arc de Triomphe. It’s a memorial to the 70000 soldiers of the british Indian Army who died various wars (The Great War among them). Like the Arc de Triomphe, an eternal flame for the Unknown Soldier burns.

As someone who really enjoys eating meat, this place is like heaven. Imagine eating barbecued skewers seasoned with Indian spices. It works like a buffet, but with two parts, the “appetizer” which is the skewers, and the “main course”, which is the standard Indian food, i.e. curries, naan bread, etc. But the appetizer is so good that I would just only eat that. But of course while in India, one must try everything!

The food in India is so different from what I normally eat, it’s pretty much impossible for me to tell what anything is. At best, I can tell what’s chicken, lamb, chickpeas, paneer, etc., but I have no idea what spices are in what dish. But it doesn’t matter, because everything tastes good. Despite what a lot of people think, not all Indians eat with their hands.

People don’t really follow driving rules here. This is us driving in the oncoming lane. Everybody honks, nobody follows lane lines, and when there’s heavy traffic everybody bunches up bumper to bumper with only a few inches between each car. Cars peek left and right to find space to try to get ahead, but the problem is when everybody does it, it slows everyone down. Big trucks have signs saying “horn please” to encourage people to honk as they pass because of their blind spots.

Occasionally, traffic can slow to a halt just because of some cows blocking the street. Or traffic can be slow because some local townspeople decided to pour their own concrete on the road to build a speed bump – because the city didn’t do it. Roads are bumpy pretty much everywhere. Freeways are slowly being built, but a lot of driving is still done on these patchy roads. Oh, and people pee on the side of the road on a regular basis.

Buildings on the other hand range from giant mansions to literally five sheets of metal stacked together to form walls. The wealth gap is huge. Poorer neighbourhoods have ditches full of trash, while richer neighbourhoods have guards standing watch in the night. But despite having a big house, the power company is notoriously unreliable. Intermittent power outages happen on an almost daily basis, so those who can afford it have backup power in their homes. Some homes also have a water pump as a water supply for their home. It’s such a reversal from what people in the western hemisphere are used to.

This post is not so much an expert chef cooking something, but more so the chronicles of a noob trying to learn the art.

I knew I wanted to sous vide it (what is it?). I wasn’t going to mess around with baking temperatures and times and what not. The sous vide would make the texture and consistency perfect. So I went ahead and looked for recipes.

I found these two:

I pretty much did a hybrid of those 2 videos. Both of them show similar content as to how to season the lamb, but the first one finishes it in the oven and deep fries some herbs for additional aromatics, while the second one uses a blowtorch. I didn’t want to deep fry anything, and I didn’t have a blow torch. So this is what I did:

Ingredients for the seasoning

• 1 tbsp salt
• 2 tsp black pepper
• 80g Colman’s dry mustard powder
• 5 sprigs of rosemary

Ingredients for the glaze

• Leftover juices from the bag after the sous vide process
• 200 mL balsamic vinegar (could be more or less according to taste)

Instructions for cooking the lamb

1. Score the lamb (in a grid pattern with each cut around 0.75″ to 1″ apart)

2. Mix the mustard powder, salt, and black pepper together

3. Rub over the lamb generously
4. Put lamb and rosemary into the sous vide bag

5. Sous vide at 55 °C / 131 °F for 24 hours. Throughout the process, juices from the lamb will collect in the bag. Be sure not to dump the juices since it will be used laterPreheat oven to 232 °C or 450 °FTake the lamb out of the bag and put it into the oven. When putting the lamb in the oven, it helps to prop up the lamb with something like a steaming rack that can go into the oven so the bottom doesn’t get soggy. Alternatively, propping it up with tin foil also works.

6. Cook the oven for 10-15 minutes. The timing here isn’t so important so long as the meat has the right “look” that you want since it’s already cooked from the sous vide.

Instructions for the glaze

The glaze can be applied on the lamb or on the side. I opted to do it on the side since I didn’t know how the glaze would turn out.

1. Mix the juices from the bag and the balsamic vinegar
2. Cook it over medium high heat until it reduces to the point where when you put a spoon into the glaze, the liquid coats the back of the spoon instead of sliding off

The lamb was a fine addition to the rest of the meal we had!

Overall, the meat tasted great. The doneness and tenderness were spot on due to using the sous vide. Some parts of the lamb were unexpectedly gamier, but I think the rub wasn’t as evenly spread as I thought. Also, I think I left the lamb in the freezer too long since the quality of the meat itself had deteriorated a bit, making the lamb meat a bit rougher. The glaze itself added a bit of acidity to the savouriness which was welcome. So I think this was somewhat of a success!

I was totally sold on this meal even before I went to Iceland. The part of this meal that I was most excited for was the puffin and the minke whale! I had never eaten them before! Puffin is supposed to have a bit of a fishy taste to it, but since it was smoked, that taste wasn’t very strong. It doesn’t really have a distinct flavour and was a bit chewy. It tastes a bit like minke whale, and minke whale tastes like really chewy red meat – without the strong flavours like beef, and not that fishy. The lobster tails were also amazing. I didn’t even know lobsters can be this tiny, or maybe it was a crayfish that was lost in translation?

Oh and it’s true what people say about Iceland being really windy. I was told to open a car door slowly and to hold on tight as I open it to prevent the damage to the car door from swinging wide open from the wind.

Another place I went was Cafe Loki, just outside the Hallgrimskirkja. Everything tastes like what you’d expect, EXCEPT the thing in the middle. That is Hákarl, whcih is fermetted shark meat. Some people say it’s rotten shark.

This isn’t shark fin like what Chinese people like to eat, but this is actual shark meat. It’s a bit chewy and has a slightly sour flavour to it. Would not eat again.

After the meal, I checked out the Hallgrimskirkja. It’s a church, but the architecture on the outside is quite unique! It isn’t like the old baroque/gothic/etc style churches in a lot of parts of Europe.

I got to try some craft beers as well. They were pretty good – not better or worse than the craft beers I’m used to drinking. I do live in Seattle, so that might speak highly of Icelandic craft beers!

As a little bonus, I saw a guy get his ass kicked at the bar. Story was that the guy who got his ass kicked was being creepy towards some women and was asked to leave, but instead attacked the employee who happened to train in MMA…
